The GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work. This knife can cover all the tasks of the other GSF range and is a classic all-rounder. Its fully forged blade is strong enough to get into and separate meat joints and can put up with a certain amount of twisting and levering, just don't use it as a screwdriver or to open jars of paint!
We regularly hear from customers that if they could only have one knife in their kitchen, it would be the Global G-2 Cook's Knife.
The G-2 is the best-selling Japanese kitchen knife ever made! It can slice, dice, chop, and really do anything you need.
A fantastic multi-purpose all round blade that is included in virtually every knife set Global produce. Winner of multiple awards, including Which Best Knife and the Housewares ICON award, the G-2 has cemented its place into the kitchenware hall of fame.
It features the iconic dotted handle that is filled with sand to provide an ergonomic, comfortable and versatile kitchen knife that is a delight to use.
Winner WHICH Best Buy award 2022
The G-9 Bread Knife is Global's classically shaped bread knife. It is a specialist knife, really for use with bread or similar food items only. The teeth are made to saw through the crust of bread but could also be used for some tough meats, for example crackling. The funny thing is, the Japanese do not really eat bread and so it is one of those products that they never really understood!
If you look closely at the knife blade you will see that on the face of the knife, the teeth have a chamber whilst on the back of the knife, the face is flat. When you cut into bread, you will automatically cut inwards in a curve rather than straight down and the chamber is there to help correct this so that your slicers will be more of a similar thickness all the way through. Whilst the G-9 can be used by left handers, the set up is right handed. Global can provide left handed bread knives on request. There is also a fluted version, the G-68.
We sometimes get asked from time to time, whether you can sharpen a bread knife. In our opinion you cannot and manufacturers that say their sharpeners can sharpen a bread knife are probably not correct. So please do not try and sharpen your Global G-9 Bread Knife!
The GSF-22 has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11 (the hollow handled version). It is a brilliant knife and often included in various combination products. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.
The G-102 Global Cheese and Herb Chopper is a delightful little tool which is the smaller version of the G-12 meat cleaver. Just like its larger version it features a thick steel to handle the repeated chopping going through vegetables and cheese. It is more suited to precision cutting and dicing rather than strong chopping like a meat cleaver. It also comes with a traditional hole which is normally used in butcher's knives to hang on a hook which it is quite handy in the kitchen for if you need it on a regular basis.
This cheese and herb chopper forms part of the Little Essential Range of 12 kitchen knives, each with its own specific characteristics that work together to form a comprehensive range of kitchen knives. Collect them all!
The GSF-49 is very similar to the GSF-22 the main difference being a slightly deeper blade. The blade has a slight hilt which gives you more height for cutting over the GSF-22, this is a slight improvement but in truth there is very little difference between this knife and the GSF-22. The knife is an excellent all round performer and can do any kitchen task.
The GSF-46 is virtually identical to the GSF-15, but it has a slightly deeper blade. These small paring knives are perfect for little kitchen tasks like cutting up fruit or taking the eyes out of potatoes.
The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blades are more curved like a chef's knife, to allow the knife to be rocked gently forward after each cut and encourage good technique. A really popular blade often found in Global sets, the GS-5 is also available in a fluted style as the GS-39.
The GS-36 9cm Paring Knife is a seriously nifty little instrument with a 9cm blade and character hollow handle. It makes up part of the Little Essentials range of kitchen knives which are useful for lots of little tasks in the kitchen. It is the hollow handle alternative to the GSF-15 and often found in more recent sets.
The hollow handle has an ergonomic shape making this little knife comfortable to handle. The plain blade makes this knife great for peeling and coring fruit or vegetables as well as other tasks that require precision. The GS Series is Global's range of small and medium sized knives and accessories which encompass everything from cook's knives to tweezers and spatulas. All GS knives are made with their Chromova18 stainless steel.
This beautiful 18cm Santoku knife from Global features a fluted blade to aid with non stick. It was originally launched as part of a promotion to celebrate everything Santoku! Slice, dice and mince your way through anything, this knife is a really good all round all purpose knife to have in your kitchen.
The GNFS range, standing for Global Ni Forged Small, this paring knife is the smallest knife in the Global Ni range with a small 9cm blade. The GNFS-01 has a fully forged blade with a flat handle similar to the GSF-15 in the classic Global series. The knife is small but strong to be used for all those little kitchen tasks, including cutting small fruits and peeling vegetables.
Global knives are supposed to be refined, delicate instruments for preparing food to exact specifications.... not the meat cleaver. It has one real purpose, to smash through bones to cut up portions of meat. The Global meat cleaver features a longer blade and thicker steel than ordinary G range knives to handle the repeated blows of going through bone and onto a hard cutting surface. Compared to most Global knives, it is the only knife which should be swung down like a hammer. Useful for preparing cuts of chicken, creating lamb chops or spare ribs. You can also use one of these knives for particularly heavy vegetables like butternut squash or pumpkin, where a smaller knife might get stuck.
The G-12 also comes with a traditional hole in the blade to be hung on hook above a butcher's table.
The G-5 has been a long time favourite of our customers and one of the best selling blades in the original Global series. When Global knives first came to the UK, the shape of the blade was quite strange. A long rectangular shaped, flat blade with only a slight knife point. The G-5 Vegetable Chopper 18cm Blade is inspired by traditional Japanese Usaba knives, popular amongst professional chefs in the Tokyo area and a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable. There is no need to push and pull the knife horizontally through the chopping motion.
European cooking tends to use a lot more chopped vegetables than in Japan and so this knife has always been favoured in sets by Global. There are quite a few variations of this knife within the Global range. The equally popular Global GS-5 is the small version, the G-81 is the fluted version and there is a fully forged GF-36 for professional chefs as well.
One of the best selling knives in the GS range, the GS-3 is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice medium sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. It is really the smallest chef's knife notwithstanding the GS-1 which has a slightly different shape of blade. The GS-3 is also available as a fluted version, the GS-51.
The GSF-17 is Global's main small peeling knife. It is a knife with a very specific purpose; to peel and turn as many vegetables as you can get your hands on! The small curved blade makes the knife practical for working around spherical objects like potatoes and apples. There is a small notch in the handle to provide grip and control to work around bumps and grooves, the sharp blade will work through tough skin on sweet potato and other root vegetables.
The GS-11 Flexible Utility Knife is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature. A fluted version of this knife exists as the GS-36.
The GNM-12 is Global Ni's flexible boning knife and is great for filleting fish with its long thin blade. Great for use with seabass, trout or even larger fish like salmon. The shape of the knife also lends itself to working well as a carving knife. If the GNM-12 is a bit big for you, consider the 12cm version the GNS-06.
These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.
The GFS-16 works well as a peeling knife or paring knife and is sort of between both. The down-turned tip of the blade is said to resemble the shape of a lamb's foot because of the curved edge and flat blade. For those wanting a proper peeler, we suggest the GSF-17 as it has a fully curved blade, but if it is a choice between a GSF-17 and a GSF-15, the GSF-16 is a good compromise and can be used for most small kitchen tasks.
This beautiful 11cm Fluted Santoku knife forms part of our Little Essentials range of 12 kitchen knives. Celebrate everything Santoku and slice, dice and mince your way through anything. This knife is a really good all-round multi-purpose knife to have in your kitchen. It is also offered as part of the G-88/4003 Little Essentials Knife Dock Set.
Makes little tasks a pleasure! This knife has the smallest hollow handle and makes a great all-purpose utility knife.
The GS-95 Cheese Knife 10.5cm blade is specially designed to slice more easily through harder cheeses than the GS-10 as it has a shorter and slightly thicker blade. Made from the same Cromova18 stainless steel as other knives, this cheese knife features a serrated blade that is perfect for use cutting hard cheddar and Parmesan.
It is still a universal cheese knife and can be used for any kind of cheese. The holes on the blade make it easier to separate the cheese from the knife and the two prongs on the front of the blade can be used for serving.
This knife forms part of the Little Essentials range of knives that form a comprehensive knife collection suitable for just about any kitchen task.
The GS-89 Cook's Knife 13cm blade is part of the Little Essential range of knives. This collection features a selection of 12 small and medium knives from the Global GS Series that work together to form a comprehensive range of kitchen knives that cover all areas of food preparation.
This cook's knife features a superior razor-sharp edge ground steeply to a point on an acute angle which means it will hold a sharper edge for longer. The knife is precisely balanced with the traditional hollow sand filled handle.
Perfect for a variety of kitchen tasks, the GS-89 is ideal for finely slicing and dicing vegetables or meat. It offers excellent stain resistance and edge retention.
The GNFS-02 is the larger knife in Gobal Ni's small fully forged series. It features a small sized 11cm blade and a flat handle. The knife is made to be small but strong and is suitable for a varierty of tasks such as cutting and slicing. As the title says this utility knife can really be used for anything.
The G-46 Santoku Knife 18cm is Global's full sized Santoku knife. Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it brilliant for Western style cooking as the blade is flat, deep and powerful, which makes the knife really good for cutting up lots of heavy root vegetables, such as sweet potato, squashes and celeriac.
Global knives produces several variations of the Santoku knife; there are smaller versions of the Santoku, the GS-35 and the GS-37. Santoku knives are also well combined with fluting which helps prevent these vegetables sticking to the knife blades. The fluted version of the G-46 is the G-48.
The G-3 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is perfectly developed for this precise task. Once you try this carving knife you will understand why it is a kitchen essential because the best cuts of meat demand the best equipment.
Having a super sharp Global G-3 Carvign Knife 21cm will ensure all your cuts of meat are thin and tender. We recommend pairing the G-3 with one of Global's carving forks, either the G-13 or the GF-24 to make a matching set. The G-82 is the fluted version of this knife.
The GSF-23 is one of a few steak knives made by Global and is great for use in tucking into big juicy fatty Rib eyes and Sirloins. It will saw effortlessly through fatty pieces of meat to give you nice clean cuts. In fact this knife has more in common with the other GSF utility knives than other steak knives as the main feature of the blade is the subtle serration in the blade. This makes the knife ideal for steaks but also works well as a utility knife for softer fruits and vegetables. It would make a great tomato knife, so is a multi function blade.
What is a bagel knife? Well it took a long time to explain to our Japanese suppliers what a bagel was and why we eat so many of them. Apparently it is a very American/British thing. Really the Global range was missing a small bread knife, as the GS series contained everything but a small bread knife. At 16cm it is good enough for most loaves of bread and it is also a cheaper option than buying the full G-9. It also doubles up as a good utility knife for vegetables that have a hard skin and soft center. So it is excellent for slices of large tomatoes as well.
We realized that some of our smaller Global blocks could not fit the large bread knife, so if you have the smallest size of ship shape block, the GS-61 is a god option.
The GS-83 is a smaller version of the GS-5 vegetable knife. It features the traditional Global sand filled hollow handle. This razor sharp knife was originally introduced to the series as part of the special Michel Roux Jnr collection of precision preparation knives. However it is now encompassed within our Little Essential Range of 12 Kitchen Knives that have been developed to form a comprehensive range of kitchen knives.
The GS-3 is a fantastic alternative to the GS-5 if you are not a fan of the handle. It carries out similar tasks and is suited for the preparation of a wide range of vegetables including larger produce such as carrots, potatoes as well as smaller items such as Brussel sprouts.
Global produce a universal cheese knife suitable for all different kinds of cheese, whether you like a hard cheddar or indulge in soft creamy bree. The Global cheese knife features holes in the blade to make it easier to push off sticky pieces. The knife blade is serrated and has two prongs suitable for serving. Order from the cheeseboard at the La Gavroche restaurant and you will be served by one of these knives.
The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.
In true GLOBAL tradition, the knife is constructed from the best Stainless Steel material and the UKON series features thicker blades to enhance performance. UKON knives are subject to even more precise grinding and finishing work, making them 10 percent sharper out of the box. The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
The Global Ukon GU-01 Chef’s Knife is a versatile all-purpose blade that excels at every cutting task you can think of in the kitchen. The GU-01 is great for chopping vegetables, meat and fish, and it can also be used to finely chop herbs or peel garlic. Whatever the task, slicing, dicing, chopping or mincing, you can rely on this chef’ knife to perform every time.
The G-21 is a classically shaped boning knife and is considered to be the standard boning knife in the Global series, it is certainly the best selling Boning knife. The knife has a long narrow blade with is tapered to a very fine point. This allows the user to work round the bones in joints of beef, lamp or pork and cut out a sizable piece of meat.
The blade is also flexible, which is great for getting under the skin and filleting fish. There are quite a few boning and filleting knives in the Global range, but the G-21 has a bolster, this is useful where working with raw meat or fish can make the knife slippy, it helps to prevent any unfortunate accidents. There is also a fully forged version of the knife, the GF-31.
The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The GF-24 will hold your joints of meat securely in place while you carve your pieces of meat. The two tines on the end can be inserted into the meat to check that the meat is cooked as the juices run clear.
Global provide two carving forks in their range, the GF-24 and the G-13. Aesthetically the GF-24 is quite pleasing to look at. Smooth rounded lines finishing in two sharp points. The GF-24 is often preferred to the standard G-13 carving fork. The main advantage of the GF-24 is that it fits in a drawer more easily as it lies flat! The G-13 prongs stick up meaning it often catches the roof of the drawer.
Consider paring with a G-3 carving knife for those perfect Sunday roasts.
The GS-36 Utility knife is a seriously nifty little instrument with a 12cm blade and character hollow handle. Part of our Little Essentials range of Kitchen knives, it can be used to perform a variety of tasks. It has a plain blade which is ideal for fruit and veg preparation including peeling.
It is the hollow handle alternative to the GSF-15 and often found in more recent sets. The hollow handle has an ergonomic shape making this little knife comfortable to handle. The GS Series is Global's range of small and medium sized knives and accessories which encompasses everything from cook's knives to tweezers and spatulas. All GS knives are made with Cromova18 stainless steel.
We also offer a knife dock storage solution for these knives the G-88/4444.
The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
You can also opt for a santoku knife which is a good all rounder and is also used by professional chefs for cutting vegetables but also do other stuff in the kitchen. The flutes will work particularly well for this knife as it is a specialist vegetable knife.
Many Japanese knife manufacturers traditionally produced a specialist knife with one-side grinding known as “Kiritsuke”. It required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to use one. The Kiritsuke Knife thus became considered to be a symbol of expertise, status and seniority.
Feeding off this tradition, Global ® Knives proceeded to engineer a Double-Edged version of the Kiritsuke in their Classic series to fashion a very versatile knife. This knife can be used to perform most of the tasks normally done with a Gyuto or Chef’s Knife, but also those of the Nakiri and Sujihiki. It has less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting action. The tip of the blade is particularly suitable for fine dicing and chopping.
Originally developed for the Roux Scholarship judges, only a further 500 of these exclusive knives have been produced so far and are available on a first come first served basis!

The Global Ukon GUF-30 Paring Knife is a must-have tool for any professional chef. It can be used for a wide variety of kitchen tasks from simple slicing and light peeling, to skilled intricate work. The small, forged blade makes the knife extremely robust and great for hand peeling, precision cuts and garnishing. It is also useful for deveining shrimp or removing seeds.

The Global Ukon GU-03 Bread Knife has a long, serrated blade, perfect for slicing through thick crusty bread loaves and soft bread rolls. The GU-03 is also great for slicing soft fruit and vegetables such as tomatoes because the serrated blade glides into the delicate skin, preventing you from crushing the juicy inner layer, leaving a nice clean finish.

The Global Ukon GUM-10 Vegetable Knife, also known as a ‘Nakiri’, is a Japanese square-tipped knife created almost exclusively for prepping vegetables. The flat parts of the blade are designed to chop and slice through vegetables with precision and ease. The knife’s wide blade is also ideal for moving ingredients from the chopping board to the pan.
The GSF-18 is a knife specially designed for use with shellfish, we would not really recommend it for any other use. The short blade is designed to get inside the shell of an oyster or scallop to cut the connection between the two halves of the shell. The short blade is designed to withstand this heavy kind of twisting, where a longer knife might break.
The GN-004 is Global Ni's large size bread knife and has a saw like blade for sawing through the crustiest loaves of bread. If you have bought a Global Ni series we do advise caution though as this blade does not fit in some of the smaller knife holders. For those looking to complete their collections we also suggest the GNM-09 bread knife which has a slightly smaller 21cm blade.
The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
The G-8 is more or less the G-9 bread knife without the serrations, but it makes a great carving knife, as it has a long and narrow blade. This carving knife makes excellent work of joints with no bones in. It will allow you to cut thin even slices of meat, so works best with hams, joints of beef, salmon and any de-boned lamb. It is a worthy alternative to the G-3, although we would suggest if you are looking for the standard carving knife to go for the G-3.
The G-77 Global Fluted 20cm Chef's Knife is a medium-sized cook's knife that will perform a variety of kitchen tasks. It has a nice sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. It features improved flutes to the blade to prevent sticking.
The GS-13 is quite similar to the GS-11 and is a sister knife to it. The GS-13 has very slight serrations along the edge of the blade. Not as pronounced as a fully serrated blade, we find that these small serrations actually work really well with fruit that has a firm skin, but watery center where you do not want the contents to go flying everywhere! The serrated blade is able to saw through the skin while keeping a very clean cut. We feel that this works particularly well with tomatoes, plums, nectarines and grapes. The knife is a utility knife though and can be used for most kitchen tasks.
The GNS-08 is a scalloped or serrated version of the GNS-06. The teeth make it really good for cutting through vegetables with touch skins and soft interiors such as tomatos, plums and kiwis. This knfie can also be used as a small bread knife.
The GF-27 is a specialist knife blade for butchering raw meat. The curved thin blade is designed to slice through joints in raw carcasses. The shape of the knife with its right angle curve in the blade is made to slash across flesh and so separate the meat from bones, ligaments and other parts that are not wanted. It is a specialist knife and does not work well for cutting or chopping vegetables and other regular kitchen work. The GF-27 has a bolster, which gives it an edge over the bolster-less G-28. This is particularly useful when the slime from raw meat can make the knife handle slipped, just having the bolster there gives you a little more drip, control and confidence when using the knife.
The butcher knife shape comes from a very old design. In the wild these knives were used for a huge variety of tasks, for cutting up food, skinning animals and self defense.
One of the problems of the Global Ni series is that the cook's knife is sort of a hybrid between a classically shaped cook's, santoku and vegetable knife, so when we say this knife is the Global Ni santoku knife it looks very similar to the cook's knives. The only slight difference is that this knife has a deeper blade and it is slightly flatter making it better at chopping rather than slicing. The Global Ni Santokus come in 3 different sizes, a middle size, the GNM-05 and a mini 11cm the GNS-03.
The GS-91 is the fluted knife in the classic Japanese Vegetable style.
If your looking for more than just a Vegetable knife then our set of 3 knives that has been released in addition to this knife for autumn 2019 would be the G-779146 which contains a chefs knife, Vegetable knife and a peeling knife. Alternatively if this knife is too small for you at 14cm then you can go for a bigger knife of the same type which is the G-81 which is also a new knife that has been released this autumn 2019 which measures at 18cm.
The GS-98 is great for the most challenging kitchen tasks. This seamlessly designed knife can handle your fruits, vegetables, and meats with ease. And with its superior sharpness, cooking your stir-fries, sauces, and stews with beautifully sliced ingredients is a pleasure.

The Global Ukon GUS-20 Small Santoku Knife is a great all-rounder knife and one of its key features is the indentations on the cutting edge. These small divets create little air pockets between the blade and your ingredients, to prevent slices from sticking as you cut. The GUS-20 is excellent for prepping medium vegetables, meat and fish.
This is the Global NI Series 16cm Oriental Cooks Knife. The Ni range features all of the things we have come to expect from Global knives; the unrivalled cutting edge, sleek distinctive design and impeccable balancing. But it is in the improvements in the Ni, designed by the original Global visionary Komin Yamada that make it truly one of the best range of knives around.
As a chef's knife the G-4 is suitable for most kitchen tasks, slicing, dicing and chopping. There is very little difference in performance between the G-4 and the classic chef knife, the G-2. The difference is cosmetic, i.e. the kink in the blade. This gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of cook's knife. It does have a nice upward curve to the blade, which when cutting with the knife allows it to rock up and down on the chopping board, a bit like a mezzaluna.
The shape has been so popular that the second new series of Global knives, the Global NI series, has been based on this knife design. The G-4 also comes in a fluted version as the G-66 and in a smaller size as the GS-58.
This knife is the fluted version of the Global Ni GNM-06 vegetable knife. A really nice size for home chef's to cut up vegeatbles, the fluted blade will help to stop food sticking.
One of the four brand new utility knives that have been introduced to the Global ® GS range of kitchen knives. The GS-108/UT Utility Knife has a plain edge and medium sized blade at 12cm. It is a brand-new Global Knife and makes up part of our new Little Essentials range of 12 kitchen knives. A great multi-tasker, use this plain edge utility knife for a range of slicing and dicing tasks in the kitchen for both hard and soft foods. A plain edge utility knife is also the ideal tool for peeling fruit as offers a straight and clean cut.
The GS-108/UT is a versatile knife which is perfectly balanced, comfortable to hold and can be stored in our Little Essentials Knife Dock Set for safety. This new plain utility knife retains Global’s ® superior quality and impeccably sharp edge.
The Global Ukon GU-04 Santoku Knife is a versatile all-purpose knife that can chop, slice and dice most vegetables, meat and fish. The word Santoku means ‘three qualities’ in Japanese and some would say this relates this to the three key prepping techniques mentioned above. The fluted edge on the blade creates little air pockets when you chop, to reduce friction and sticking of foods.
This chef's knife can be used for any purpose. It is a really good tough medium sized chef knife capable of performing a variety of kitchen tasks. It is built in the shape of Gyuto, a Japanese style knife, these knives generally have a flat part of the blade towards the heel for chopping, whilst the front half of the blade is curved for slicing and more precision work. The knife has a slightly kicked forward heel to it which provides a semi bolster for a bit of added protection. As a fully forged knife it is stronger than the standard G series of knives and lends itself well for use in professional kitchen settings. A great knife if you are looking for one knife for all tasks. If however you want something a little bigger, consider the GF-33 or GF-34.

Unit price perThe G-96 is a is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat.
The main advantage to owning the fluted knife over the standard knives is the non stick properties of these blades. If you cut a lot of starchy vegetables, these knives are quite good as the veg is less likely to stick like glue onto the knives and get in the way of cutting things up.

2020 marks the 35th Anniversary of the world leading and award-winning iconic brand of Japanese premium knives: Global ®. It’s been further acclaimed winner of the coveted ‘Best Knife Brand’ category at the Readers’ Choice Awards 2020.
It won the awards 11 times in a row!...
From a decade of dominance, this accolade shows that the brand remains at the forefront of the industry and has been selected by professional chefs and keen home cooks alike as their preferred choice. Global ® knives, which is distributed worldwide has maintained its reputation for quality, unrivalled sharpness, balance and longevity.
The G-30 is a specialist filleting knife. It is very similar to the G-21 and effectively does the same task however this is the shape and design preferred in the Scandinavian market. In fact this knife was made specially for Swedish fans of Global who had always wanted their style of boning knife to be made available in the Global range. It has a long and flexible blade to effortlessly get between the skin and the flesh of a fish. It would also make a good Iberico ham slicer.
The G-13 is Global's first carving fork, made for Western style roasts. The sharp prongs will hold the joint in place whilst you carve, the rigid structure will allow you to control how you carve so that you have the perfect Sunday roast! The Global carving fork is made of the same materials as the regular G Series items and has the same handle, so it is comfortable and easy use.
An alternative to the G-13 is the G-24 which is a fully forged carving fork. It does the same job, but is flat. It is not as easy to use but fits in the drawer easily as the G-13 usually cannot be stored in one of Global's blocks.
Consider pairing with the G-3 carving knife for the perfect matching set.
Global SAI fully forged carving fork. Perfect for holding your Sunday roast, with a handle to match your SAI carving knife. Global SAI are the third generation of knives from the Global/Yoshikin factory. Featuring 3 ply steel, 18/10 stainless steel wrapped around a hardened CHROMOVA18 core.
The handle design incorporates an ergonomic thumb rest which helps set the right grip for the best cutting technique.
The sharp prongs will hold the joint in place whilst you carve, the rigid structure will allow you to control how you carve so that you have the perfect Sunday roast!
This is a specialist knife blade for butchering raw meat.
The butcher knife shape comes from a very old design. In the wild these knives were used for a huge variety of tasks, for cutting up food, skinning animals and self defense.
Global also produce a GF-27, fully forged butcher's knife. This knife has a bolster which provides a bit more protection when working with raw meat.
The little brother to the G-1, featuring the classic GS Global handle, the GS-2 has the same blade, but shorter at 13cm. The round end to the blade allows you to slice into boney meat like chicken and duck without the tip of the blade catching in the bone. The GS-2 is basically the GS-3 with a rounded end and therefore can also be used as a general purpose cook's knife for cutting and chopping.
The GF-31 is essentially the fully forged version of the more popular G-21 Boning knife. Both knives have long thin blades which make the knife good for getting between the skin and the meat of the fish. The main difference between the two knives is the addition of a bolster. The bolster gives a lot of extra protection by preventing hands from slipping forward onto the blade. The main drawback is the fact that this blade is not as flexible. There is a trade off between the strength of the fully forged blade and have a flexible knife. This makes the knife better for more regular use, in professional kitchen settings, where repeated use of the boning knife is needed.
The newest addition to the Global family is the GS-110, a small 15cm Kiritsuke Knife. Traditionally, Kiritsuke knives are much larger, often over 24cm in length, and are used by Japanese head chefs as multipurpose slicing knives. They typically feature very straight blades similar to Japanese Usuba vegetable knives, combined with the length of a Yanagiba knife. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a symbol of status.
Our smaller Kiritsuke, the GS-110, pays homage to this traditional knife with a slightly curved blade that aids in general cutting tasks, functioning effectively as a small chef's or cook's knife. The GS-110AN model is featured in all special edition 40th anniversary sets.
Traditionally, many Japanese knife manufacturers produced specialist knives with single-side grinding known as “Kiritsuke”. These knives required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to wield one. The Kiritsuke Knife thus became a symbol of expertise, status, and seniority.
Drawing from this tradition, Global ® Knives engineered a Double-Edged version of the Kiritsuke in their Classic series, creating a highly versatile knife capable of performing tasks typically handled by a Gyuto or Chef’s Knife, as well as those of a Nakiri and Sujihiki. It features less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting motion. The blade's tip is particularly adept for fine dicing and chopping.

The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
The Ukon GUF-32 Utility Knife is a fully forged, robust knife that can tackle any kitchen task, whether its filleting fish, carving meat or slicing vegetables. Its thin, agile blade and compact size make it wonderfully nimble and easy to manoeuvre. When precision cuts are needed, the GUF-32 is the right tool for the job.
The G-10 is a specialist salmon slicer. It has a really long and thin flexible blade that makes it suitable for this purpose only. These knives are typically used for cutting pieces of smoked salmon or trout, the blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented.
The handle is the same as other G series knives and is comfortable to hold. There is a gap of about a inch from the handle where the blade is not sharpened to provide a bit of protection. This is the longest knife blade that Global produce and as such does not fit in any of the blocks and also may not slot in a drawer. Ideally it needs to be put on a magnetic rack.
The GNS-06 is a small flexible utility knife made for the Global Ni range and is a good useful alrounder in any collection. The knife performs much in the same way as the GS-11 Global classic utility knife. Good for filleting small fish such as seabass and seabream or as a small carving knife for chicken and duck. The knife is available in a larger version as the GNM-12.
Global SAI has two vegetable knvies in its range. The SAI-04 is a specialist vegetable chopping knife. It has a long flat blade designed to get a clean cut when the knife cuts down onto the board. It is quite a heavy knife and suitable for long hours in the kitchen. With its long 19cm blade and the stretched handle of the SAI series, the SAI-04 knife is the largest vegetable chopper Global produce. It has a smaller brother the SAI-M06, which home users will find a bit more manageable as it has only a 15cm length. This makes it more similar to the popular G-5
The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku. Having actually laid the G-46 Santoku knife next to this blade, the difference between the knives is minimal, the difference being the slight absence of a Santoku's lambs foot ending. So this knife could also be described as a 16cm Santoku knife.
Consider as an alternative to a G-2, or a vegetable chopper. The G-64 is also offered as the same blade with fluting.
The SAI-02 is Global SAI's carving knife and is perfectly suited for the task. It has a long narrow blade suitable for carving even slices of your favourite joint. It is quite a substantial knife with a lot of presence and is best suited towards larger cuts of meat. The knife has quite a similar profile to the chef's knives and can be used as a multi purpose slicing knife.
A beatiful Global Ni carving fork to match your Global Ni carving knife. The GNC-01 will hold your meat firmly in place whilst you carve your meat. The carving fork features smooth contours and sharp points designed both to hold the meat in place and check that it is cooked properly.

The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
The Global Ukon GUS-22 Utility Knife is a multipurpose knife, ideal for slicing, mincing and prepping. It is a great kitchen knife for everyday use and the serrated blade makes it particularly useful for cutting fruits and vegetables with fine skins or soft insides. The GUS-22 will also glide through other foods such as salami, sausages and bread loaves.
The GS-35 is a mini Santoku knife, useful for cutting up small vegetables and fruit. Like its big brother the G-46, the knife is suitable for the three ways of the Santoku, slicing, dicing and mincing. The knife has a relatively flat blade for cutting and makes a good alternative to the better known GS-5. The GS-35 is also available in a fluted version as the GS-37.
The GS-8 is a specialist peeling knife and has a curved blade to work around carrots, potatoes and other vegetables and fruits. The knife has the same blade as the GSF-17 but the GS-8 has the standard hollow handle of the Global GS range. We recommend this peeler for chefs with bigger hands who find the GSF range too small.
The GS-108SC Utility Knife has a medium sized blade at 12cm with a scalloped edge. It makes up part of our new Little Essentials range of 12 kitchen knives with smaller handles for easy use. This scalloped edge kitchen knife is the ideal tool for cutting easily through foods with a thicker crust such as bread rolls or salami as well as fruit such as grapefruit, lemons and oranges that have a tough outer and soft centre.
The GS-108SC is perfectly balanced and is a great addition to any kitchen knife set as it has the functionality of the bread knife in a smaller version. Its impeccably sharp edge can be stored in our Little Essentials Knife Dock Set for safety. A scalloped blade utility knife that retains Global's ® high quality craftsmanship and finish.
Introducing a brand-new utility knife that forms part of our Little Essentials range of kitchen knives with smaller handles for easy use. The GS-108SE Utility Knife has a serrated edge and medium sized blade at 12cm. This Serrated edge kitchen knife is the ideal tool for cutting smoothly through fruit and veg with a thicker skin such as tomatoes or citrus fruit such as grapefruit and oranges.
The GS-108SE is a well- balanced, easy to use utility knife that can be stored in our Little Essentials Knife Dock Set for safety. This new serrated blade utility knife retains Global’s ® superior quality and impeccably sharp edge.

The Global Ukon GU-05 Carving Knife features a long, narrow blade that is slightly curved to effortlessly glide through cooked meats and poultry. This specialist knife is stylish, functional and perfectly balanced allowing you to carve the finest slices for your Sunday roasts, BBQ’s, parties and buffets.
The GF-36 is the fully forged version of Global’s extremely popular G-5. The shape of the knife is specifically intended for chopping vegetables. The GF-36 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. The front of the blade has a slight upward curve for slicing and dicing vegetables.
We recommend the GF-36 for professional chefs who do a lot of chopping in the kitchen. This knife will take a lot of punishment and is a lot more robust than its cousin the G-5.
As a fully forged knife the GF-36 has the same blade as the G-5, but is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence that the G-5, which is great if you think Global knives are a bit too light.
Global SAI's bread knives are designed to cut through the crustiest loaves of bread, This bread knife is quite long and does not fit in the medium and small size Global blocks. If you are looking to add a bread knife to a block set, try the SAI-M04 which has only a 17cm blade.
The G Series of Global knives is a classic collection of large longer bladed knives with weighted hollow handles, used for general food preparation. All knives are made in two parts with the blade and the handle being welded together. The blade itself is made of Cromova18, Global ’s special blend of Molybdenum Vanadium steel, which makes the knife hard compared to European blades and able to retain a decent edge for a long time. Global ’s special feature though is that the knives are ground down to a very acute angle (15 Degrees) down the face of each side of the blade. Rather than having a beveled edge, this is how Global knives are renowned for being so sharp and for staying sharp for such a long time. Global were one of the first Japanese brands into the UK market and have built up a cult following and the brand is well recognized. Always wash your knives by hand, dry thoroughly and never put them in a dishwasher. All Global knives are covered by the manufacturers guarantee against faults and defects. Knives should be stored in a block or other protective case to protect the blades and always kept out of reach of children. Knives cannot be sold to any person under the age of 18. When you place an order with us, you are confirming that you are 18 or older. Sometimes we may ask for proof of identification.
The chef's knife is an absolute essential for any kitchen. This GS-58 Oriental Cook's Knife 11cm blade has a smaller blade for more precision and is suitable for most slicing, dicing and chopping kitchen tasks. The attractive kink in the blade gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of chef's knife. It does have a beautiful upward curve to the blade, which when cutting allows the knife to rock up and down on the chopping board, a bit like a mezzaluna.
This knife forms part of our Little Essentials range of small and medium knives that create a comprehensive knife collection to perform a large variety of kitchen tasks. These kitchen knives have the G-88/4444 dock that has been specifically designed to house this range.
The shape has been so popular that the second series of Global knives, the Global NI series, has been based on this knife design. There is a larger version of this knife available, the G-4 Oriental Chef's Knife and it also comes in a fluted version as the GS-59 Fluted Kitchen Knife 11cm.
The GNS-02 has a really flat blade making this utility knife particularly good for slicing. The blade itself is not so deep so if you are looking for a utility knife for cut and chopping try the GNS-03.
The GNM-11 is the fluted version of the GNM-10 carving knife. The knife is perfect for carving large joints of boneless meat. These knives also have long blades suitable for filleting large fish such as salmon and trout.
The GS-90 is a mini Santoku knife and is identical to the smaller brother of the G-80, it is the fluted version of the GS-35. Useful for cutting up small vegetables and fruit, a Santoku knife is used for slicing, dicing and mincing. They make good multipurpose knives for all round use.
The Global G-7 Oriental Deba is a traditional Japanese knife with a one sided grind and it is essentially the G-4 with a single bevel. It is a short but heavy knife, made to cut up whole fish. The blade is squat and has some weight to it, signifying its strength in chopping.
The weight of the deba knife allows it to cut through fish bones to sever the head and tail from the fish and this is what it is designed to do. Using the tip of the blade you can also fillet fish, Japanese style. As a traditional Japanese knife we do not recommend purchasing this knife, if you are looking for a general purpose cook's knife. If you like the shape of the knife but wish to use the blade for more European style cooking, we recommend the G-4.
The oriental Deba also comes in a smaller size as the GS-4.
This knife is something between a paring, utility and chef's knife. It has a really flat blade edge which makes it good for getting clean cuts through fruit and veg. A hollow handle version of the GSF-16.
The SAI-F03 is a specialist peeling knife and will make quick work of potatoes, apples and carrots. It has a small curved blade which is unsuited to any other kitchen task such as chopping or slicing.
The G-84 is the fluted version of the G-57 chef's knife and like the standard Global chef's knives can perform most roles in kitchen.
Like it's brother it is set apart from the standard chef's knives by its shorted fatter blade. So the knife is more predisposed towards chopping vegetables. The profile of the knife is similar to a Santoku knife and the knife could be described as a 16cm fluted Santoku Knife.
The G-82 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender. We recommend pairing the G-82 with one of Global carving forks, either the G-13 or the GF-24 to make a matching set. Fluted to prevent food from sticking to the blade.

The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
The Global Ukon GUS-24 Utility Knife is great for chopping smaller foods such as shallots, avocado and cheese. This multiskilled knife shares many qualities of a chef’s knife but is well suited to working with smaller food items, allowing for more precise, delicate cutting work. The GUS-24 Utility Knife is also useful as a small carving knife.
Michel Roux Jr asked Global Knives to create a wedding knife for his daughter's wedding. Global Knives said the minimum order was a dozen knives so 2 were given to the Roux family and there were another 10 remaining. These rare knives are now available to purchase from knives from japan's website and there will not be any further stock for them in the future. Which makes it a great collectors item or perhaps it could be used by an wedding events organiser. If you know someone that is a great fan of global knives and you want to make their wedding day special then this wedding knife would really stand out.
The GF-100 is a Global chopping knife with an extra thick 4mm blade. This makes the knives somewhat heavier and thicker than traditional Global knives. The shape of the knife is specifically intended for chopping vegetables.
The GF-100 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. With a fully forged blade, the GF-100 is more suited to the professional kitchen and chefs more accommodated to the weight and feel of a German knife.
We recommend the GF-100 for professional chefs who do a lot of chopping in the kitchen.
As a fully forged knife, the GF-100 is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence than that of other knives, which is great if you think Global knives are a bit too light.
The SAI-F01 is a fully forged small blade similar to the GSF series in the classic Global line. This makes the knife small but strong and good for all those little kitchen task, such as peeling, taking the eyes out of potatoes, or just cutting up little bits of fruit. Being a fully forged blade the handle is quite flat as the similar SAI-S01 has a hollow handle. The fully forged SAI-F01 is more durable in that sense but not as comfortable to hold in the hand.
The SAI-M02 is a really good all round knife. It has a really good mid sized blade length at 15cm which is suitable for a range of tasks. The shape of the blade suggests that knife can be used for slicing and so would make a good small carving knife especially if you like eating chicken or duck. It is also the knife closest to being a filleting knife in the range, so we would also suggest if you are missing a boning knife from your SAI collection that this knife can do the job.
The GF-37 is Global's fully forged carving knife. It features a long 22cm blade, which can easily slice through the best cuts of meat. the addition of a bolster gives a bit of extra protection. With a long narrow blade the knife can also be used for filleting fish, slicing fish or preparing sashimi. It makes a poor chopping knife, because the blade is in line with the bottom of the bolster, meaning the knife can only really be used for slicing by drawing the knife backwards.
As a fully forged knife, it has a lot more strength than the standard Global carving knife and the GF-37 is fantastic for professional settings where a carving knife is needed in constant use. These make brilliant knives to use where food is brought to the table and carved in front of people, repeatedly.
It provides an alternative to the G-3, if you prefer a bolster on the knife.
The G-29 is another fairly specialist knife in the G series line. The knife is suited for work with medium sized fish and is a bit of a cross over between a cook's knife and a chopper. It is also perfectly suited for cutting up chicken, turkey or other poultry that may be cooked whole.
The deep blade is designed to help the knife cut through bones to remove fish heads, tails and fins as the knife can be swung down onto a chopping board. Useful for preparing fish if you like to buy your fish whole, this knife will also create deep slicers to serve up.
The SAI-S01 9cm & SAI-S02 10cm are small paring knives that can be compared to the GS-36 in the classic Global line. The knife is made for small kitchen tasks, such as peeling vegetables or cutting up fruit. Global SAI produce two 9cm paring knives, the other being the SAI-F01. The difference here is that the S01 has a longer hollow handle. This makes the knife a bit more comfortable in the hand, but the handle with the thumb rest forces you to hold the knife in a certain way and we would suggest that makes this paring knife a better cutting and slicing knife than the F01.
This stunning GF-99 Fluted Cook's Knife 20.5cm is part of our fully forged range of chef knives. It is a fantastic multi-purpose kitchen knife that is capable of performing a variety of kitchen tasks. Additionally the fluted blade keeps food from sticking to the knife as you are dicing and slicing.
Our fully forged range are heavier but more robust than the standard G series knives and so they make great professional chef's knives. This GF range is ideal if the knife is being used on a regular basis in a commercial kitchen as retains it's incredible sharpness alongside providing the weight and power to chopping that is often required.
This paring knife is a good little utility knife to have around. Similar to the GSF-15 but with a hollow handle you can use this knife for cutting and slicing.
The GNM-04 has a flexible blade making this knife a virtual utility knife for all sorts of kitchen tasks. It can be most similarly compared to
The GF-40 is listed as a boning knife, but the profile of the blade makes it suitable for a variety of kitchen tasks because of the small hilt and elongated upturn in the blade. Being fully forged it is strong enough for most kitchen tasks and can be equally used as a universal knife. This knife can be used as a small slicer, a boning knife or for cutting up small bits of meat, fruit or vegetables. It has a nice big comfortable handle with a bolster for extra protection. The protection of the bolster makes the knife suitable for cutting raw meat as it gives you a bit more grip on the handle.
The G-47 is essentially a Western style version of the Yanagi Sashimi Slicer and works the same way. The G-47 knife has the typical 15 degree bevel on each side of the blade as per the standard G series. It can be used for a number of kitchen tasks. It makes a great carving knife and is perfect for slicing big pieces of your favorite cut of meat. It also makes a good fish filleting knife or for use making sashimi.
The GS-4 is Global's small version of the Deba Bocho knife, a small version of the G-7 Deba, a Japanese style kitchen knife used to cut mostly fish but also meat. This knife has the traditional Japanese one sided grind so is not suitable for Western style preparation. It can be used for cutting, filleting and slicing smaller fish. A perfect small utility knife for Japanese chefs who use a larger Sashimi or Deba knife and need something for lighter work.
The smallest of the Global Ni santoku knives, the GNS-03 should be seen more of as a petty knife suitable for little kitchen task as a utility knife. A really nice all round knife to complete sets.
Like the Yanagi Sashimi knife the Tako sashimi knife is a specialist Japanese blade for slicing fish. It is discernible from the regular Yanagi Knife by the flat end to the blade. Specifically the Tako part stands for octopus in English. The knife is generally used in the Tokyo area of Japan as a octopus slicer, but the knife can be used to fillet and medium sized fish.
Like other traditional Japanese knife blades, this knife has a bevel on only one side of the blade, to help achieve even slices.
This GS-108HSE Half Serrated Steak Knife is the perfect tool for slicing into a juicy meat steak. With a medium sized blade at 12cm, it can also be used as a utility knife. It makes up part of our new Little Essentials range of 12 kitchen knives with smaller handles for easy use. It is the Global Ni equivelent to the best selling and award winning Global Classic G-2. The G-97 is Global's classically shaped bread knife. It is 2cm shorter than the G-9. It is a specialist knife, really for use with bread only. Whilst the G-97 can be used by left handers, the set up is right handed.

The G-18, G-19 and G-20 are a family of larger flexible filleting knives with the large G series handles designed for heavier work. We recommend these knives for filleting the biggest types of fish, trout, salmon, cod etc where a much larger knife is needed and where something like the G-21 is inadequate. These blades are all really bendy and quite flexible, especially the two larger sizes. The smallest size, the G-20 is moderately flexible and is better for use with meats and can be used as a typical carving knife.

These rectangular knives, referred to in Chinese as Caidao are multipurpose knives. Chinese people and chef's will use these knives in the same way that Western chef's will use Western style chef's knives, such as the G-2. These knives will be typically used to prepare all kinds of meat and fish. In fact it is typically the ONLY knife that a Chinese chef will use. Whilst the Chinese chef's knife resembles a cleaver, it does in fact have a sharp thin blade like a standard G series knife. The G-49 is a typical Chinese Caidao with a 2.2mm thick blade and if used as a cleaver, the blade will usually get damaged. Different parts of the blade are used for different tasks with the front of the blade used for a tapping cutting stroke, the middle and back of the knife for heavier chopping work. Whilst it may seem awkward those skilled with a Chinese blade can use them for any kitchen task.
The G-50 whilst also a Chinese chef's knife has a much thicker 4.0mm blade and is known as a Gudao in Chinese, or Chinese chopper. These choppers are more likely to be used for chopping vegetables, maybe cutting through some softer bones and mincing meat.

Global SAI's bread knives are desinged to cut through the crustiest loaves of bread, This bread knife is quite long and does not fit in the medium and small size Global blocks. If you are looking to add a bread knife to a block set, try the SAI-M04 which has only a 17cm blade.
The Global SAI Santoku knife is a really big powerful knife suited for the 3 ways of Sanoku, slicing, dicing and mincing. The SAI-03 is one of the heavist Santoku knives in the Global range. It is really good for chopping vegetables as it has quite a flat profile, but can be used as well for slicing meat. The G-22 and G-23 are rather large bread knives with a 20cm and 24cm blade respectively. These knives are alternatives to the classically shaped bread knife the G-9. These blades are much deeper than the G-9 and are basically serrated versions of the G-2 and G-16 cook's knives and so whilst they are labelled as bread knives, they could equally double up as serrated chef's knife. The deeper serrated blade will make it better at cutting through larger than usual loaves of bread such as big sourdoughs or tough bread such as rye or black bread which are typically baked to be quite deep. However due to the size and profile of the knife with its tapered point, it would make a great knife for cutting up any large fruits or vegetables with tough husks, such as pumpkin, coconut and pineapple. A good knife to have for tougher jobs in the kitchen.

The cook's knives are in the classic shape of the Western style cook's knife and so can perform any kitchen task, whether you need to slice, dice or chop. If you can only afford to get one knife, always buy one good chef's knife. These knives are represented by their non fluted equivalents the G-2, G-55 and G-58.
The main advantage to owning the fluted knife over the standard knives is the non stick properties of these blades. If you cut a lot of starchy vegetables, these knives are quite good as the veg is less likely to stick like glue onto the knives and get in the way of cutting things up.
The main downside to fluted blades is that the lifespa
Global's large handle slicer knives come in two sizes, the G-1 at 21cm and this model the G-6 at 18cm, there is also a small handle equivalent, the GS-2. It is listed as a slicing knife, or slicer knife because of its rounded blunt end. It is very similar to the G-2 in that sense but is designed for cutting meat into pieces, the idea behind the blunt end is that the tip does not nick or catch as you are slicing through meat and you can smoothly roll it into the cut. These slicing blades work particularly well on meat that is close to the bone, such as chicken or duck. Nevertheless, the size and shape of the knife lend it to being another all-rounder and this Global knife can be used as a multipurpose knife for cutting up vegetables.
