The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blades are more curved like a chef's knife, to allow the knife to be rocked gently forward after each cut and encourage good technique. A really popular blade often found in Global sets, the GS-5 is also available in a fluted style as the GS-39.
The G-5 has been a long time favourite of our customers and one of the best selling blades in the original Global series. When Global knives first came to the UK, the shape of the blade was quite strange. A long rectangular shaped, flat blade with only a slight knife point. The G-5 Vegetable Chopper 18cm Blade is inspired by traditional Japanese Usaba knives, popular amongst professional chefs in the Tokyo area and a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable. There is no need to push and pull the knife horizontally through the chopping motion.
European cooking tends to use a lot more chopped vegetables than in Japan and so this knife has always been favoured in sets by Global. There are quite a few variations of this knife within the Global range. The equally popular Global GS-5 is the small version, the G-81 is the fluted version and there is a fully forged GF-36 for professional chefs as well.
The GS-83 is a smaller version of the GS-5 vegetable knife. It features the traditional Global sand filled hollow handle. This razor sharp knife was originally introduced to the series as part of the special Michel Roux Jnr collection of precision preparation knives. However it is now encompassed within our Little Essential Range of 12 Kitchen Knives that have been developed to form a comprehensive range of kitchen knives.
The GS-3 is a fantastic alternative to the GS-5 if you are not a fan of the handle. It carries out similar tasks and is suited for the preparation of a wide range of vegetables including larger produce such as carrots, potatoes as well as smaller items such as Brussel sprouts.

The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

This knife is the fluted version of the Global Ni GNM-06 vegetable knife. A really nice size for home chef's to cut up vegeatbles, the fluted blade will help to stop food sticking.
Global SAI has two vegetable knvies in its range. The SAI-04 is a specialist vegetable chopping knife. It has a long flat blade designed to get a clean cut when the knife cuts down onto the board. It is quite a heavy knife and suitable for long hours in the kitchen. With its long 19cm blade and the stretched handle of the SAI series, the SAI-04 knife is the largest vegetable chopper Global produce. It has a smaller brother the SAI-M06, which home users will find a bit more manageable as it has only a 15cm length. This makes it more similar to the popular G-5
The GF-36 is the fully forged version of Global’s extremely popular G-5. The shape of the knife is specifically intended for chopping vegetables. The GF-36 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. The front of the blade has a slight upward curve for slicing and dicing vegetables.
We recommend the GF-36 for professional chefs who do a lot of chopping in the kitchen. This knife will take a lot of punishment and is a lot more robust than its cousin the G-5.
As a fully forged knife the GF-36 has the same blade as the G-5, but is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence that the G-5, which is great if you think Global knives are a bit too light.
