The GS-5 Vegetable Chopper makes chopping, slicing and prepping vegetables effortless. Taking inspiration from Japanese Usuba (Vegetable Knives), the relatively flat part of the blade is designed to effortlessly chop through fruit and vegetables by coming into full contact with the chopping board for a clean cut. The front of the blade is more curved so the knife can be rocked gently forward after each cut and encourage good technique.

The GS-5 is the little brother of the G-5 18cm Vegetable Chopper, with the same shape of blade in a smaller proportion.
The GSF-49 is very similar to the GSF-22 the main difference being a slightly deeper blade. The blade has a slight hilt which gives you more height for cutting over the GSF-22, this is a slight improvement but in truth there is very little difference between this knife and the GSF-22. The knife is an excellent all round performer and can do any kitchen task.

Because of its popularity, there are quite a few variations of this knife. The equally popular GLOBAL GS-5 is the small version, the G-81 is the fluted version and there is a fully forged GF-36 for professional chefs as well.
The GS-11 Flexible Utility Knife is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature. A fluted version of this knife exists as the GS-36.
The GS-83 is a smaller version of the GS-5 vegetable knife. It features the traditional Global sand filled hollow handle. This razor sharp knife was originally introduced to the series as part of the special Michel Roux Jnr collection of precision preparation knives. However it is now encompassed within our Little Essential Range of 12 Kitchen Knives that have been developed to form a comprehensive range of kitchen knives.
The GS-3 is a fantastic alternative to the GS-5 if you are not a fan of the handle. It carries out similar tasks and is suited for the preparation of a wide range of vegetables including larger produce such as carrots, potatoes as well as smaller items such as Brussel sprouts.
The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
You can also opt for a santoku knife which is a good all rounder and is also used by professional chefs for cutting vegetables but also do other stuff in the kitchen. The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The GS-36 Utility knife is a seriously nifty little instrument with a 12cm blade and character hollow handle. Part of our Little Essentials range of Kitchen knives, it can be used to perform a variety of tasks. It has a plain blade which is ideal for fruit and veg preparation including peeling.
It is the hollow handle alternative to the GSF-15 and often found in more recent sets. The hollow handle has an ergonomic shape making this little knife comfortable to handle. The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
The GS-13 is quite similar to the GS-11 and is a sister knife to it. The GS-13 has very slight serrations along the edge of the blade. Not as pronounced as a fully serrated blade, we find that these small serrations actually work really well with fruit that has a firm skin, but watery center where you do not want the contents to go flying everywhere! The serrated blade is able to saw through the skin while keeping a very clean cut. We feel that this works particularly well with tomatoes, plums, nectarines and grapes. The knife is a utility knife though and can be used for most kitchen tasks.

The biggest brother of the GSF-15 and GSF-22, the GSF-24 is the largest forged utility knife in the Global range. It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives. The GSF-24 has quite a long 15cm blade, which gives it better use towards slicing and carving meat. Nevertheless an all-round performer which can be used for most kitchen tasks.
