The G-102 Global Cheese and Herb Chopper is a delightful little tool which is the smaller version of the G-12 meat cleaver. Just like its larger version it features a thick steel to handle the repeated chopping going through vegetables and cheese. It is more suited to precision cutting and dicing rather than strong chopping like a meat cleaver. It also comes with a traditional hole which is normally used in butcher's knives to hang on a hook which it is quite handy in the kitchen for if you need it on a regular basis.

The GS-95 Cheese Knife 10.5cm blade is specially designed to slice more easily through harder cheeses than the GS-10 as it has a shorter and slightly thicker blade. What can a bread knife be used for?
Whilst designed for cutting bread, this serrated slicing blade could also be used for some tough meats, for example crackling.
The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

The Global Ukon GU-03 Bread Knife has a long, serrated blade, perfect for slicing through thick crusty bread loaves and soft bread rolls. The GU-03 is also great for slicing soft fruit and vegetables such as tomatoes because the serrated blade glides into the delicate skin, preventing you from crushing the juicy inner layer, leaving a nice clean finish.
What is a bagel knife? Well it took a long time to explain to our Japanese suppliers what a bagel was and why we eat so many of them. Apparently it is a very American/British thing. Really the Global range was missing a small bread knife, as the GS series contained everything but a small bread knife. At 16cm it is good enough for most loaves of bread and it is also a cheaper option than buying the full G-9. It also doubles up as a good utility knife for vegetables that have a hard skin and soft center. So it is excellent for slices of large tomatoes as well.
We realized that some of our smaller Global blocks could not fit the large bread knife, so if you have the smallest size of ship shape block, the GS-61 is a god option.
The GN-004 is Global Ni's large size bread knife and has a saw like blade for sawing through the crustiest loaves of bread. If you have bought a Global Ni series we do advise caution though as this blade does not fit in some of the smaller knife holders. For those looking to complete their collections we also suggest the GNM-09 bread knife which has a slightly smaller 21cm blade.
Global SAI's bread knives are designed to cut through the crustiest loaves of bread, This bread knife is quite long and does not fit in the medium and small size Global blocks. If you are looking to add a bread knife to a block set, try the SAI-M04 which has only a 17cm blade.
The GNM-09 is a specialist bread knife and really can only be used for this purpose. The GNM-09 was created as the original bread knife the GN-004 did not fit so well into some of the smaller blocks. The GNM-09 is comparable to the popular G-9 knife in the Global classic range and makes a fine addition to any set.
The G-97 is Global's classically shaped bread knife. It is 2cm shorter than the G-9. It is a specialist knife, really for use with bread only. The teeth are made to saw through the crust of bread but could also be used for some tough meats, for example crackling. The funny thing is, the Japanese do not really eat bread and so it is one of those products that they never really understood! If you look closely at the knife blade you will see that on the face of the knife, the teeth have a chamber whilst on the back of the knife, the face is flat. When you cut into bread, you will automatically cut inwards in a curve rather than straight down and the chamber is there to help correct this so that your slicers will be more of a similar thickness all the way through. Whilst the G-97 can be used by left handers, the set up is right handed.
The G-22 and G-23 are rather large bread knives with a 20cm and 24cm blade respectively. These knives are alternatives to the classically shaped bread knife the G-9. These blades are much deeper than the G-9 and are basically serrated versions of the G-2 and G-16 cook's knives and so whilst they are labelled as bread knives, they could equally double up as serrated chef's knife. The deeper serrated blade will make it better at cutting through larger than usual loaves of bread such as big sourdoughs or tough bread such as rye or black bread which are typically baked to be quite deep. However due to the size and profile of the knife with its tapered point, it would make a great knife for cutting up any large fruits or vegetables with tough husks, such as pumpkin, coconut and pineapple. A good knife to have for tougher jobs in the kitchen.

The G-10 is a specialist salmon slicer. It has a really long and thin flexible blade that makes it suitable for this purpose only. These knives are typically used for cutting pieces of smoked salmon or trout, the blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented.
The handle is the same as other G series knives and is comfortable to hold. There is a gap of about a inch from the handle where the blade is not sharpened to provide a bit of protection. This is the longest knife blade that Global produce and as such does not fit in any of the blocks and also may not slot in a drawer. Ideally it needs to be put on a magnetic rack.
The G Series of Global knives is a classic collection of large longer bladed knives with weighted hollow handles, used for general food preparation. All knives are made in two parts with the blade and the handle being welded together. The blade itself is made of Cromova18, Global ’s special blend of Molybdenum Vanadium steel, which makes the knife hard compared to European blades and able to retain a decent edge for a long time. Global ’s special feature though is that the knives are ground down to a very acute angle (15 Degrees) down the face of each side of the blade. Rather than having a beveled edge, this is how Global knives are renowned for being so sharp and for staying sharp for such a long time. Global were one of the first Japanese brands into the UK market and have built up a cult following and the brand is well recognized. Always wash your knives by hand, dry thoroughly and never put them in a dishwasher. All Global knives are covered by the manufacturers guarantee against faults and defects. Knives should be stored in a block or other protective case to protect the blades and always kept out of reach of children. Knives cannot be sold to any person under the age of 18. These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.
The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The GNS-08 is a scalloped or serrated version of the GNS-06. The teeth make it really good for cutting through vegetables with touch skins and soft interiors such as tomatos, plums and kiwis. This knfie can also be used as a small bread knife.
