The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

In true GLOBAL tradition, the knife is constructed from the best Stainless Steel material and the UKON series features thicker blades to enhance performance. UKON knives are subject to even more precise grinding and finishing work, making them 10 percent sharper out of the box. The 14cm GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The 8cm GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work. 

The biggest brother of the GSF-15 and GSF-22, the 15cm GSF-24 is the largest forged utility knife in the Global range. It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives.

The G-3 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender. 

The GF-24 will hold your joints of meat securely in place while you carve your pieces of meat. The two tines on the end can be inserted into the meat to check that the meat is cooked as the juices run clear.

The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku.
