How to use your knife sharpener?
GLOBAL pull-through knife sharpeners are easy to use. Simply pour water into the wheel compartment and run your knife through each slot 7-8 times applying very slight, even pressure, moving from coarse to fine. Rinse and dry the knife before use.
How often should you sharpen knives?
Knife maintenance depends on individual usage. For regular use, sharpen every few weeks to maintain ultra sharp blades.

The GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work. This knife can cover all the tasks of the other GSF range and is a classic all-rounder. Its fully forged blade is strong enough to get into and separate meat joints and can put up with a certain amount of twisting and levering, just don't use it as a screwdriver or to open jars of paint!

What can a bread knife be used for?
Whilst designed for cutting bread, this serrated slicing blade could also be used for some tough meats, for example crackling.
The GSF-22 has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11 (the hollow handled version). It is a brilliant knife and often included in various combination products. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.

The GS-36 9cm Paring Knife is a seriously nifty little instrument with a 9cm blade and character hollow handle. It makes up part of the Little Essentials range of kitchen knives which are useful for lots of little tasks in the kitchen. It is the hollow handle alternative to the GSF-15 and often found in more recent sets.
The hollow handle has an ergonomic shape making this little knife comfortable to handle. The plain blade makes this knife great for peeling and coring fruit or vegetables as well as other tasks that require precision. The GS Series is Global's range of small and medium sized knives and accessories which encompass everything from cook's knives to tweezers and spatulas. All GS knives are made with their Chromova18 stainless steel.
The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blades are more curved like a chef's knife, to allow the knife to be rocked gently forward after each cut and encourage good technique. A really popular blade often found in Global sets, the GS-5 is also available in a fluted style as the GS-39.

Slice, dice and mince your way through anything, this knife is a really good all round all purpose knife to have in your kitchen.
The G-5 has been a long time favourite of our customers and one of the best selling blades in the original Global series. When Global knives first came to the UK, the shape of the blade was quite strange. A long rectangular shaped, flat blade with only a slight knife point. The G-5 Vegetable Chopper 18cm Blade is inspired by traditional Japanese Usaba knives, popular amongst professional chefs in the Tokyo area and a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable. There is no need to push and pull the knife horizontally through the chopping motion.
European cooking tends to use a lot more chopped vegetables than in Japan and so this knife has always been favoured in sets by Global. There are quite a few variations of this knife within the Global range. The equally popular Global GS-5 is the small version, the G-81 is the fluted version and there is a fully forged GF-36 for professional chefs as well.
Global Knives are proud to produce a matching set of kitchen shears to compliment your range of Global kitchen knives. These scissors feature heavy weight cast steel handles and feel very substantial whilst held. The steel blades are thick and strong and contain small teeth to help grip chicken fillets and other meats. Between the handles you will also fit a nut cracker. These sicssors will also fit into the butcher's steel slot on most ship shape type Global blocks.
The newest addition to the Global family is the GS-110, a small 15cm Kiritsuke Knife. Traditionally, Kiritsuke knives are much larger, often over 24cm in length, and are used by Japanese head chefs as multipurpose slicing knives. They typically feature very straight blades similar to Japanese Usuba vegetable knives, combined with the length of a Yanagiba knife. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a symbol of status.
Our smaller Kiritsuke, the GS-110, pays homage to this traditional knife with a slightly curved blade that aids in general cutting tasks, functioning effectively as a small chef's or cook's knife. The GS-110AN model is featured in all special edition 40th anniversary sets.
Traditionally, many Japanese knife manufacturers produced specialist knives with single-side grinding known as “Kiritsuke”. These knives required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to wield one. The Kiritsuke Knife thus became a symbol of expertise, status, and seniority.
Drawing from this tradition, Global ® Knives engineered a Double-Edged version of the Kiritsuke in their Classic series, creating a highly versatile knife capable of performing tasks typically handled by a Gyuto or Chef’s Knife, as well as those of a Nakiri and Sujihiki. It features less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting motion. The blade's tip is particularly adept for fine dicing and chopping.

The GNFS-02 is the larger knife in Gobal Ni's small fully forged series. It features a small sized 11cm blade and a flat handle. The knife is made to be small but strong and is suitable for a varierty of tasks such as cutting and slicing. As the title says this utility knife can really be used for anything.
The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
