The newest addition to the Global family is the GS-110, a small 15cm Kiritsuke Knife. Traditionally, Kiritsuke knives are much larger, often over 24cm in length, and are used by Japanese head chefs as multipurpose slicing knives. They typically feature very straight blades similar to Japanese Usuba vegetable knives, combined with the length of a Yanagiba knife. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a symbol of status.
Our smaller Kiritsuke, the GS-110, pays homage to this traditional knife with a slightly curved blade that aids in general cutting tasks, functioning effectively as a small chef's or cook's knife. The GS-110AN model is featured in all special edition 40th anniversary sets.
Traditionally, many Japanese knife manufacturers produced specialist knives with single-side grinding known as “Kiritsuke”. These knives required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to wield one. The Kiritsuke Knife thus became a symbol of expertise, status, and seniority.
Drawing from this tradition, Global ® Knives engineered a Double-Edged version of the Kiritsuke in their Classic series, creating a highly versatile knife capable of performing tasks typically handled by a Gyuto or Chef’s Knife, as well as those of a Nakiri and Sujihiki. It features less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting motion. The blade's tip is particularly adept for fine dicing and chopping.
Global Knives, crafted in Japan to impeccable standards, feature Cromova 18 stainless-steel blades known for their razor-sharpness, hollow weighted handles, and a 15-degree convex cutting edge. Renowned for their distinctive design, these knives have maintained their popularity over the years. To mark their 40th anniversary, Global has introduced a selection of limited-edition knives and knife block sets.
Global's limited edition 40th Anniversary 7 Piece Knife Block features the iconic 'ship shape' knife block set, with 6 of the most popular knives from Global.
The Global 40th Anniversary 7 Piece Knife Block Set includes:
G-4 | 18cm Oriental Cook's Knife - The G-4 chef's knife is versatile for most kitchen tasks such as slicing, dicing, and chopping. Its performance closely matches that of the classic G-2 chef's knife, with the primary difference being aesthetic—the slight kink in the blade. This design element gives the knife an 'oriental' appearance but does not affect its functionality. Contrary to its appearance, the G-4 is not tailored specifically for oriental cuisine or techniques; rather, it offers a different shape compared to traditional chef's knives. Its gently curved blade facilitates a rocking motion while cutting, similar to a mezzaluna on a chopping board.
G-58 | 11cm Cook's Knife - The G-58 knife, measuring 11 cm, is a slightly smaller version of the same knife, featuring the large G series handle. The shorter blade offers better control and may feel less intimidating, especially for those with smaller hands. Regardless of size, all these knives perform the same tasks in the kitchen, making the choice largely a matter of personal preference.
GS-110AN | 15cm Kiritsuke Knife - The newest addition to the Global family, is the GS-110, a small 15cm Kiritsuke Knife. A Kiritsuke Knife, traditionally much larger and over 24cm in length is used by Japanese head chefs as a multipurpose knife for slicing. Kiritsuke knives typically have very straight blades, like the Japanese Usuba vegetable knives, but with the longer blade of a Yanagiba knife. Such knives are hard to use and are usually only wielded by the most skilled Japanese chefs as a symbol of status. Our small Kiritsuke pays homage to the true knife, with a slightly curved blade to aid general cutting and function as a small chef's/cook's knife.
GS-38 | 9cm Paring Knife - The GS-38 is a beautifully designed paring knife perfect for various small kitchen tasks. It serves as a hollow handle counterpart to the GSF-15 and is commonly included in newer knife sets. Its ergonomic hollow handle ensures comfortable handling, enhancing the overall user experience.
GS-55 | 12cm Fluted Oriental Santoku Knife - The GS-55 Oriental Santoku knife features flutes that prevent food from sticking to the blade while cutting. It's ideal for slicing, dicing, and mincing, making it perfect for small vegetables and fruits. This versatile knife is an excellent all-purpose tool for various kitchen tasks.
GS-61 | 16cm Bagel/Bread Knife - The GS-61 is suitable for most types of bread and is a more affordable alternative to the full G-9. Additionally, it serves well as a utility knife for vegetables with tough skins and soft interiors, making it excellent for slicing large tomatoes.
