The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
The little brother to the G-1, featuring the classic GS Global handle, the GS-2 has the same blade, but shorter at 13cm. The round end to the blade allows you to slice into boney meat like chicken and duck without the tip of the blade catching in the bone. The GS-2 is basically the GS-3 with a rounded end and therefore can also be used as a general purpose cook's knife for cutting and chopping.
One of the best selling knives in the GS range, the GS-3 is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice medium sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. It is really the smallest chef's knife notwithstanding the GS-1 which has a slightly different shape of blade. The GS-3 is also available as a fluted version, the GS-51.
The GS-4 is Global's small version of the Deba Bocho knife, a small version of the G-7 Deba, a Japanese style kitchen knife used to cut mostly fish but also meat. This knife has the traditional Japanese one sided grind so is not suitable for Western style preparation. It can be used for cutting, filleting and slicing smaller fish. A perfect small utility knife for Japanese chefs who use a larger Sashimi or Deba knife and need something for lighter work.
The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blades are more curved like a chef's knife, to allow the knife to be rocked gently forward after each cut and encourage good technique. A really popular blade often found in Global sets, the GS-5 is also available in a fluted style as the GS-39.
This knife is something between a paring, utility and chef's knife. It has a really flat blade edge which makes it good for getting clean cuts through fruit and veg. A hollow handle version of the GSF-16.
This paring knife is a good little utility knife to have around. Similar to the GSF-15 but with a hollow handle you can use this knife for cutting and slicing.
The GS-8 is a specialist peeling knife and has a curved blade to work around carrots, potatoes and other vegetables and fruits. The knife has the same blade as the GSF-17 but the GS-8 has the standard hollow handle of the Global GS range. We recommend this peeler for chefs with bigger hands who find the GSF range too small.
These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.
Global produce a universal cheese knife suitable for all different kinds of cheese, whether you like a hard cheddar or indulge in soft creamy bree. The Global cheese knife features holes in the blade to make it easier to push off sticky pieces. The knife blade is serrated and has two prongs suitable for serving. Order from the cheeseboard at the La Gavroche restaurant and you will be served by one of these knives.
The GS-11 Flexible Utility Knife is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature. A fluted version of this knife exists as the GS-36.
The GS-13 is quite similar to the GS-11 and is a sister knife to it. The GS-13 has very slight serrations along the edge of the blade. Not as pronounced as a fully serrated blade, we find that these small serrations actually work really well with fruit that has a firm skin, but watery center where you do not want the contents to go flying everywhere! The serrated blade is able to saw through the skin while keeping a very clean cut. We feel that this works particularly well with tomatoes, plums, nectarines and grapes. The knife is a utility knife though and can be used for most kitchen tasks.
The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The GS-20 is one of three different fish bone tweezers produced by Global. These are the most popular as they are usually the cheapest set available but they are quite a bit smaller than the GS-29. The two prongs perfectly touch each other to grip the smallest bones to make sure you get the perfect fillet of fish. Recommended for use with smaller fish such as sea bass, sea bream and St Peter's.
Global produce a few different styles of palette knives to compliment the Global collection. The GS-21 are the 'flat' palette knives, i.e. the blade lies horizontally with the handle of the knife. The GS-21 comes in 4 different sizes, starting with the smallest, GS 21/4 11cm, GS 21/6 15cm, GS 21/8 20cm and GS 21/10 25cm. All these different sizes feature the same handle, with has a comfortable thumb rest for added control. The blades themselves are not sharp, but are flexible making these knives great for getting under any food that is frying like eggs or burgers, or for controlling runny food whilst cooking. You can also use these knives for spreading icing.

The biggest of the Global spatula range, the GS-27 has a large fanned blade with holes in, which makes this spatula particularly good fro cooking with larger items that are either greasy or tend to fall apart like whole fish. The slanted edge gives a good angle to section of slices or push away grease.
A nice wide Spatula from Global knives good for turning food on a grill or frying pan. Nice and flexible to weave under something, it is convenient for soft food that can fall apart like fish.
These fish bone tweezers are for removing small bones from raw fillets of fish. The GS-29 has a fatter design that the other tweezers in the range from Global, giving a comfortable thumb grip. The ends perfectly touch, allowing you to grip the most stubborn bones and pull them out. Works really well with large salmon or trouts.
The GS-35 is a mini Santoku knife, useful for cutting up small vegetables and fruit. Like its big brother the G-46, the knife is suitable for the three ways of the Santoku, slicing, dicing and mincing. The knife has a relatively flat blade for cutting and makes a good alternative to the better known GS-5. The GS-35 is also available in a fluted version as the GS-37.

Global produce 4 different sizes or cranked spatula, a GS 42/4 10cm, GS 42/6, 15cm, GS 42/8 20cm and GS 42/10 25cm. These cranked spatulas are so named due to the large kink in the knife blade. This raises the handle somewhat away from the cooking surface, keeping your hands cooler. It also makes it easier to get a fully flat connection between the knife blade and the frying surface, ideal if you need to press down on any burgers or bacon to help it cook faster. All the GS-42 series feature a hollow handle with thumb rest for added control.

The chef's knife is an absolute essential for any kitchen. This GS-58 Oriental Cook's Knife 11cm blade has a smaller blade for more precision and is suitable for most slicing, dicing and chopping kitchen tasks. The attractive kink in the blade gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of chef's knife. It does have a beautiful upward curve to the blade, which when cutting allows the knife to rock up and down on the chopping board, a bit like a mezzaluna.
This knife forms part of our Little Essentials range of small and medium knives that create a comprehensive knife collection to perform a large variety of kitchen tasks. These kitchen knives have the G-88/4444 dock that has been specifically designed to house this range.
The shape has been so popular that the second series of Global knives, the Global NI series, has been based on this knife design. There is a larger version of this knife available, the G-4 Oriental Chef's Knife and it also comes in a fluted version as the GS-59 Fluted Kitchen Knife 11cm.
What is a bagel knife? Well it took a long time to explain to our Japanese suppliers what a bagel was and why we eat so many of them. Apparently it is a very American/British thing. Really the Global range was missing a small bread knife, as the GS series contained everything but a small bread knife. At 16cm it is good enough for most loaves of bread and it is also a cheaper option than buying the full G-9. It also doubles up as a good utility knife for vegetables that have a hard skin and soft center. So it is excellent for slices of large tomatoes as well.
We realized that some of our smaller Global blocks could not fit the large bread knife, so if you have the smallest size of ship shape block, the GS-61 is a god option.
The GS-83 is a smaller version of the GS-5 vegetable knife. It features the traditional Global sand filled hollow handle. This razor sharp knife was originally introduced to the series as part of the special Michel Roux Jnr collection of precision preparation knives. However it is now encompassed within our Little Essential Range of 12 Kitchen Knives that have been developed to form a comprehensive range of kitchen knives.
The GS-3 is a fantastic alternative to the GS-5 if you are not a fan of the handle. It carries out similar tasks and is suited for the preparation of a wide range of vegetables including larger produce such as carrots, potatoes as well as smaller items such as Brussel sprouts.
The GS-89 Cook's Knife 13cm blade is part of the Little Essential range of knives. This collection features a selection of 12 small and medium knives from the Global GS Series that work together to form a comprehensive range of kitchen knives that cover all areas of food preparation.
This cook's knife features a superior razor-sharp edge ground steeply to a point on an acute angle which means it will hold a sharper edge for longer. The knife is precisely balanced with the traditional hollow sand filled handle.
Perfect for a variety of kitchen tasks, the GS-89 is ideal for finely slicing and dicing vegetables or meat. It offers excellent stain resistance and edge retention.
The GS-90 is a mini Santoku knife and is identical to the smaller brother of the G-80, it is the fluted version of the GS-35. Useful for cutting up small vegetables and fruit, a Santoku knife is used for slicing, dicing and mincing. They make good multipurpose knives for all round use.
The GS-91 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
You can also opt for a santoku knife which is a good all rounder and is also used by professional chefs for cutting vegetables but also do other stuff in the kitchen. If your looking for more than just a Vegetable knife then our set of 3 knives that has been released in addition to this knife for autumn 2019 would be the G-779146 which contains a chefs knife, Vegetable knife and a peeling knife. Alternatively if this knife is too small for you at 14cm then you can go for a bigger knife of the same type which is the G-81 which is also a new knife that has been released this autumn 2019 which measures at 18cm.
The GS-92 is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice medium-sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. This is the fluted version of the popular GS-3.
The fluted blade will help to stop food sticking to the blade.
The GS-95 Cheese Knife 10.5cm blade is specially designed to slice more easily through harder cheeses than the GS-10 as it has a shorter and slightly thicker blade. Made from the same Cromova18 stainless steel as other knives, this cheese knife features a serrated blade that is perfect for use cutting hard cheddar and Parmesan.
It is still a universal cheese knife and can be used for any kind of cheese. The holes on the blade make it easier to separate the cheese from the knife and the two prongs on the front of the blade can be used for serving.
This knife forms part of the Little Essentials range of knives that form a comprehensive knife collection suitable for just about any kitchen task.

The G-102 Global Cheese and Herb Chopper is a delightful little tool which is the smaller version of the G-12 meat cleaver. Just like its larger version it features a thick steel to handle the repeated chopping going through vegetables and cheese. It is more suited to precision cutting and dicing rather than strong chopping like a meat cleaver. It also comes with a traditional hole which is normally used in butcher's knives to hang on a hook which it is quite handy in the kitchen for if you need it on a regular basis.
This cheese and herb chopper forms part of the Little Essential Range of 12 kitchen knives, each with its own specific characteristics that work together to form a comprehensive range of kitchen knives. Collect them all!
