The Global SAI Santoku knife is a really big powerful knife suited for the 3 ways of Sanoku, slicing, dicing and mincing. The SAI-03 is one of the heavist Santoku knives in the Global range. It is really good for chopping vegetables as it has quite a flat profile, but can be used as well for slicing meat. As the knife is so heavy it is a lot stronger than standard Global knives and will take a lot of punishment. A smaller version of the Santoku knife is available as the SAI-M03, at 13.5cm is brilliant for smaller veg.

The SAI-M02 is a really good all round knife. It has a really good mid sized blade length at 15cm which is suitable for a range of tasks. The shape of the blade suggests that knife can be used for slicing and so would make a good small carving knife especially if you like eating chicken or duck. It is also the knife closest to being a filleting knife in the range, so we would also suggest if you are missing a boning knife from your SAI collection that this knife can do the job.

The knife is made for small kitchen tasks, such as peeling vegetables or cutting up fruit. Global SAI produce two 9cm paring knives, the other being the SAI-F01. The difference here is that the S01 has a longer hollow handle. This makes the knife a bit more comfortable in the hand, but the handle with the thumb rest forces you to hold the knife in a certain way and we would suggest that makes this paring knife a better cutting and slicing knife than the F01.

Being a fully forged blade the handle is quite flat as the similar SAI-S01 has a hollow handle. The fully forged SAI-F01 is more durable in that sense but not as comfortable to hold in the hand.

Global Ni produce 3 different sizes of vegetable knife. These knives all feature flatter blades designed to cut down through vegetables and give clean cuts. Choose between a GNM 08 - 16cm, GNM 07 - 15cm and GNM 06 - 14cm size. These knives are based on the popular G-5 and GS-5 Global classic vegetable choppers. These knives are more or less identical in shape to the cook's and santoku knives, so do consider these as alternatives. There is also a 14cm fluted vegetable chopper available in a 14cm size, the GNM-01.
