The G-102 Global Cheese and Herb Chopper is a delightful little tool which is the smaller version of the G-12 meat cleaver. Just like its larger version it features a thick steel to handle the repeated chopping going through vegetables and cheese. It is more suited to precision cutting and dicing rather than strong chopping like a meat cleaver. The GSF-49 is very similar to the GSF-22 the main difference being a slightly deeper blade. The blade has a slight hilt which gives you more height for cutting over the GSF-22, this is a slight improvement but in truth there is very little difference between this knife and the GSF-22. The knife is an excellent all round performer and can do any kitchen task.

Santoku means ‘three virtues” or “three uses” in Japanese which refers to the santoku knife’s ability in slicing, dicing and chopping and its design which handles meat fish and vegetables. That’s why a santoku knife it is considered an all-purpose Japanese kitchen knife.

Because of its popularity, there are quite a few variations of this knife. The equally popular GLOBAL GS-5 is the small version, the G-81 is the fluted version and there is a fully forged GF-36 for professional chefs as well.
Global knives are supposed to be refined, delicate instruments for preparing food to exact specifications.... not the meat cleaver. It has one real purpose, to smash through bones to cut up portions of meat. The Global meat cleaver features a longer blade and thicker steel than ordinary G range knives to handle the repeated blows of going through bone and onto a hard cutting surface. Compared to most Global knives, it is the only knife which should be swung down like a hammer. Useful for preparing cuts of chicken, creating lamb chops or spare ribs. You can also use one of these knives for particularly heavy vegetables like butternut squash or pumpkin, where a smaller knife might get stuck.
The G-12 also comes with a traditional hole in the blade to be hung on hook above a butcher's table.
The GLOBAL GS-110AN special edition Kiritsuke Knife, a standout Japanese kitchen knife that functions as a small chef's or cook's knife for serious home cooks and professional chefs.
Traditionally, Kiritsuke knives are much larger with a straight, single edged blade. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a status symbol. Our smaller Kiritsuke pays homage to this traditional knife but with a slightly curved, double-edge blade and angled tip that aid in general cutting tasks.

One of the best selling knives in the GS range, the GS-3 is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice medium sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. It is really the smallest chef's knife notwithstanding the GS-1 which has a slightly different shape of blade. The GS-3 is also available as a fluted version, the GS-51.
The GS-11 Flexible Utility Knife is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature. A fluted version of this knife exists as the GS-36.
The GSF-17 is Global's main small peeling knife. It is a knife with a very specific purpose; to peel and turn as many vegetables as you can get your hands on! The small curved blade makes the knife practical for working around spherical objects like potatoes and apples. There is a small notch in the handle to provide grip and control to work around bumps and grooves, the sharp blade will work through tough skin on sweet potato and other root vegetables.
The GNM-12 is Global Ni's flexible boning knife and is great for filleting fish with its long thin blade. Great for use with seabass, trout or even larger fish like salmon. The shape of the knife also lends itself to working well as a carving knife. If the GNM-12 is a bit big for you, consider the 12cm version the GNS-06.
These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.

The GS-95 Cheese Knife 10.5cm blade is specially designed to slice more easily through harder cheeses than the GS-10 as it has a shorter and slightly thicker blade. Made from the same Cromova18 stainless steel as other knives, this cheese knife features a serrated blade that is perfect for use cutting hard cheddar and Parmesan.
It is still a universal cheese knife and can be used for any kind of cheese. The holes on the blade make it easier to separate the cheese from the knife and the two prongs on the front of the blade can be used for serving.

The GFS-16 works well as a peeling knife or paring knife and is sort of between both. The down-turned tip of the blade is said to resemble the shape of a lamb's foot because of the curved edge and flat blade. For those wanting a proper peeler, we suggest the GSF-17 as it has a fully curved blade, but if it is a choice between a GSF-17 and a GSF-15, the GSF-16 is a good compromise and can be used for most small kitchen tasks.
The GS-83 is a smaller version of the GS-5 vegetable knife. It features the traditional Global sand filled hollow handle. This razor sharp knife was originally introduced to the series as part of the special Michel Roux Jnr collection of precision preparation knives. However it is now encompassed within our Little Essential Range of 12 Kitchen Knives that have been developed to form a comprehensive range of kitchen knives.
The GS-3 is a fantastic alternative to the GS-5 if you are not a fan of the handle. It carries out similar tasks and is suited for the preparation of a wide range of vegetables including larger produce such as carrots, potatoes as well as smaller items such as Brussel sprouts.

The G-46 Santoku Knife 18cm is Global's full sized Santoku knife. Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it brilliant for Western style cooking as the blade is flat, deep and powerful, which makes the knife really good for cutting up lots of heavy root vegetables, such as sweet potato, squashes and celeriac.
Global knives produces several variations of the Santoku knife; there are smaller versions of the Santoku, the GS-35 and the GS-37. Santoku knives are also well combined with fluting which helps prevent these vegetables sticking to the knife blades. The fluted version of the G-46 is the G-48.
Global produce a universal cheese knife suitable for all different kinds of cheese, whether you like a hard cheddar or indulge in soft creamy bree. The Global cheese knife features holes in the blade to make it easier to push off sticky pieces. The knife blade is serrated and has two prongs suitable for serving. Order from the cheeseboard at the La Gavroche restaurant and you will be served by one of these knives.
The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
You can also opt for a santoku knife which is a good all rounder and is also used by professional chefs for cutting vegetables but also do other stuff in the kitchen. The flutes will work particularly well for this knife as it is a specialist vegetable knife. The G-21 is a classically shaped boning knife and is considered to be the standard boning knife in the Global series, it is certainly the best selling Boning knife. The knife has a long narrow blade with is tapered to a very fine point. This allows the user to work round the bones in joints of beef, lamp or pork and cut out a sizable piece of meat.
The blade is also flexible, which is great for getting under the skin and filleting fish. There are quite a few boning and filleting knives in the Global range, but the G-21 has a bolster, this is useful where working with raw meat or fish can make the knife slippy, it helps to prevent any unfortunate accidents. There is also a fully forged version of the knife, the GF-31.
The GF-24 Carving Fork will hold your joints of meat securely in place while you carve clean, even cuts of meat every time. The two tines can be inserted into the meat to check that the meat is cooked as the juices run clear. A true kitchen essential because the best cuts of meat demand the best equipment.

What is a bagel knife? Well it took a long time to explain to our Japanese suppliers what a bagel was and why we eat so many of them. Apparently it is a very American/British thing. Really the Global range was missing a small bread knife, as the GS series contained everything but a small bread knife. At 16cm it is good enough for most loaves of bread and it is also a cheaper option than buying the full G-9. It also doubles up as a good utility knife for vegetables that have a hard skin and soft center. So it is excellent for slices of large tomatoes as well.
We realized that some of our smaller Global blocks could not fit the large bread knife, so if you have the smallest size of ship shape block, the GS-61 is a god option.
The GSF-23 is one of a few steak knives made by Global and is great for use in tucking into big juicy fatty Rib eyes and Sirloins. It will saw effortlessly through fatty pieces of meat to give you nice clean cuts. In fact this knife has more in common with the other GSF utility knives than other steak knives as the main feature of the blade is the subtle serration in the blade. This makes the knife ideal for steaks but also works well as a utility knife for softer fruits and vegetables. It would make a great tomato knife, so is a multi function blade.

What is a Diamond-Like Carbon coating?
DLC, or Diamond-Like Carbon, is a surface treatment that imparts diamond-like qualities to the blade. This results in significantly increased hardness and durability, enhanced rust resistance and a smoother blade for reduced friction during slicing.

The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.
In true GLOBAL tradition, the knife is constructed from the best Stainless Steel material and the UKON series features thicker blades to enhance performance. UKON knives are subject to even more precise grinding and finishing work, making them 10 percent sharper out of the box. The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.

It is the hollow handle alternative to the GSF-15 and often found in more recent sets. The hollow handle has an ergonomic shape making this little knife comfortable to handle. The GS Series is Global's range of small and medium sized knives and accessories which encompasses everything from cook's knives to tweezers and spatulas. All GS knives are made with Cromova18 stainless steel.

The GNS-05 is a classically shaped boning knife, good to fillet fish. It has a slight serration on the blade.
Many Japanese knife manufacturers traditionally produced a specialist knife with one-side grinding known as “Kiritsuke”. It required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to use one. The Kiritsuke Knife thus became considered to be a symbol of expertise, status and seniority.
Feeding off this tradition, Global ® Knives proceeded to engineer a Double-Edged version of the Kiritsuke in their Classic series to fashion a very versatile knife. This knife can be used to perform most of the tasks normally done with a Gyuto or Chef’s Knife, but also those of the Nakiri and Sujihiki. It has less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting action. The tip of the blade is particularly suitable for fine dicing and chopping.
Originally developed for the Roux Scholarship judges, only a further 500 of these exclusive knives have been produced so far and are available on a first come first served basis!
As a chef's knife the G-4 is suitable for most kitchen tasks, slicing, dicing and chopping. There is very little difference in performance between the G-4 and the classic chef knife, the G-2. The difference is cosmetic, i.e. the kink in the blade. This gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of cook's knife. It does have a nice upward curve to the blade, which when cutting with the knife allows it to rock up and down on the chopping board, a bit like a mezzaluna.
The shape has been so popular that the second new series of Global knives, the Global NI series, has been based on this knife design. The G-4 also comes in a fluted version as the G-66 and in a smaller size as the GS-58.

The GSF-18 is a knife specially designed for use with shellfish, we would not really recommend it for any other use. The short blade is designed to get inside the shell of an oyster or scallop to cut the connection between the two halves of the shell. The short blade is designed to withstand this heavy kind of twisting, where a longer knife might break.

The G-8 is more or less the G-9 bread knife without the serrations, but it makes a great carving knife, as it has a long and narrow blade. This carving knife makes excellent work of joints with no bones in. It will allow you to cut thin even slices of meat, so works best with hams, joints of beef, salmon and any de-boned lamb. It is a worthy alternative to the G-3, although we would suggest if you are looking for the standard carving knife to go for the G-3.
The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
The GN-004 is Global Ni's large size bread knife and has a saw like blade for sawing through the crustiest loaves of bread. If you have bought a Global Ni series we do advise caution though as this blade does not fit in some of the smaller knife holders. For those looking to complete their collections we also suggest the GNM-09 bread knife which has a slightly smaller 21cm blade.
The GS-91 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.

The GS-13 is quite similar to the GS-11 and is a sister knife to it. The GS-13 has very slight serrations along the edge of the blade. Not as pronounced as a fully serrated blade, we find that these small serrations actually work really well with fruit that has a firm skin, but watery center where you do not want the contents to go flying everywhere! The serrated blade is able to saw through the skin while keeping a very clean cut. We feel that this works particularly well with tomatoes, plums, nectarines and grapes. The knife is a utility knife though and can be used for most kitchen tasks.

These small divets create little air pockets between the blade and your ingredients, to prevent slices from sticking as you cut. The GUS-20 is excellent for prepping medium vegetables, meat and fish.

The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku. Having actually laid the G-46 Santoku knife next to this blade, the difference between the knives is minimal, the difference being the slight absence of a Santoku's lambs foot ending. So this knife could also be described as a 16cm Santoku knife.
Consider as an alternative to a G-2, or a vegetable chopper. The G-64 is also offered as the same blade with fluting.
One of the problems of the Global Ni series is that the cook's knife is sort of a hybrid between a classically shaped cook's, santoku and vegetable knife, so when we say this knife is the Global Ni santoku knife it looks very similar to the cook's knives. The only slight difference is that this knife has a deeper blade and it is slightly flatter making it better at chopping rather than slicing. The Global Ukon GU-04 Santoku Knife is a versatile all-purpose knife that can chop, slice and dice most vegetables, meat and fish. The word Santoku means ‘three qualities’ in Japanese and some would say this relates this to the three key prepping techniques mentioned above. The G-30 is a specialist filleting knife. It is very similar to the G-21 and effectively does the same task however this is the shape and design preferred in the Scandinavian market. In fact this knife was made specially for Swedish fans of Global who had always wanted their style of boning knife to be made available in the Global range. It has a long and flexible blade to effortlessly get between the skin and the flesh of a fish. It would also make a good Iberico ham slicer.

The G-13 is Global's first carving fork, made for Western style roasts. The sharp prongs will hold the joint in place whilst you carve, the rigid structure will allow you to control how you carve so that you have the perfect Sunday roast! The Global carving fork is made of the same materials as the regular G Series items and has the same handle, so it is comfortable and easy use.
An alternative to the G-13 is the G-24 which is a fully forged carving fork. It does the same job, but is flat. It is not as easy to use but fits in the drawer easily as the G-13 usually cannot be stored in one of Global's blocks.

The G-10 is a specialist salmon slicer. It has a really long and thin flexible blade that makes it suitable for this purpose only. These knives are typically used for cutting pieces of smoked salmon or trout, the blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented.
The handle is the same as other G series knives and is comfortable to hold. There is a gap of about a inch from the handle where the blade is not sharpened to provide a bit of protection. This is the longest knife blade that Global produce and as such does not fit in any of the blocks and also may not slot in a drawer. Ideally it needs to be put on a magnetic rack.
The GS-35 is a mini Santoku knife, useful for cutting up small vegetables and fruit. Like its big brother the G-46, the knife is suitable for the three ways of the Santoku, slicing, dicing and mincing. The knife has a relatively flat blade for cutting and makes a good alternative to the better known GS-5. The GS-35 is also available in a fluted version as the GS-37.
The GNS-06 is a small flexible utility knife made for the Global Ni range and is a good useful alrounder in any collection. The knife performs much in the same way as the GS-11 Global classic utility knife. Good for filleting small fish such as seabass and seabream or as a small carving knife for chicken and duck. The knife is available in a larger version as the GNM-12.

The GF-36 is the fully forged version of Global’s extremely popular G-5. The shape of the knife is specifically intended for chopping vegetables. The GF-36 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. The front of the blade has a slight upward curve for slicing and dicing vegetables.
We recommend the GF-36 for professional chefs who do a lot of chopping in the kitchen. This knife will take a lot of punishment and is a lot more robust than its cousin the G-5.

It feels substantially heavier and has a lot more presence that the G-5, which is great if you think Global knives are a bit too light.

The GNM-11 is the fluted version of the GNM-10 carving knife. The knife is perfect for carving large joints of boneless meat. These knives also have long blades suitable for filleting large fish such as salmon and trout.
The G-84 is the fluted version of the G-57 chef's knife and like the standard Global chef's knives can perform most roles in kitchen.
Like it's brother it is set apart from the standard chef's knives by its shorted fatter blade. So the knife is more predisposed towards chopping vegetables. The profile of the knife is similar to a Santoku knife and the knife could be described as a 16cm fluted Santoku Knife.

This knife is something between a paring, utility and chef's knife. It has a really flat blade edge which makes it good for getting clean cuts through fruit and veg. A hollow handle version of the GSF-16.
The Global G-7 Oriental Deba is a traditional Japanese knife with a one sided grind and it is essentially the G-4 with a single bevel. It is a short but heavy knife, made to cut up whole fish. The blade is squat and has some weight to it, signifying its strength in chopping.
The weight of the deba knife allows it to cut through fish bones to sever the head and tail from the fish and this is what it is designed to do. Using the tip of the blade you can also fillet fish, Japanese style. As a traditional Japanese knife we do not recommend purchasing this knife, if you are looking for a general purpose cook's knife. If you like the shape of the knife but wish to use the blade for more European style cooking, we recommend the G-4.
The oriental Deba also comes in a smaller size as the GS-4.
The GF-100 is a Global chopping knife with an extra thick 4mm blade. This makes the knives somewhat heavier and thicker than traditional Global knives. The shape of the knife is specifically intended for chopping vegetables.
The GF-100 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. With a fully forged blade, the GF-100 is more suited to the professional kitchen and chefs more accommodated to the weight and feel of a German knife.
We recommend the GF-100 for professional chefs who do a lot of chopping in the kitchen.
As a fully forged knife, the GF-100 is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence than that of other knives, which is great if you think Global knives are a bit too light.
The SAI-F03 is a specialist peeling knife and will make quick work of potatoes, apples and carrots. It has a small curved blade which is unsuited to any other kitchen task such as chopping or slicing.
The G-29 is another fairly specialist knife in the G series line. The knife is suited for work with medium sized fish and is a bit of a cross over between a cook's knife and a chopper. It is also perfectly suited for cutting up chicken, turkey or other poultry that may be cooked whole.
The deep blade is designed to help the knife cut through bones to remove fish heads, tails and fins as the knife can be swung down onto a chopping board. Useful for preparing fish if you like to buy your fish whole, this knife will also create deep slicers to serve up.
The SAI-F01 is a fully forged small blade similar to the GSF series in the classic Global line. This makes the knife small but strong and good for all those little kitchen task, such as peeling, taking the eyes out of potatoes, or just cutting up little bits of fruit. Being a fully forged blade the handle is quite flat as the similar SAI-S01 has a hollow handle. The fully forged SAI-F01 is more durable in that sense but not as comfortable to hold in the hand.
The SAI-M02 is a really good all round knife. It has a really good mid sized blade length at 15cm which is suitable for a range of tasks. The shape of the blade suggests that knife can be used for slicing and so would make a good small carving knife especially if you like eating chicken or duck. It is also the knife closest to being a filleting knife in the range, so we would also suggest if you are missing a boning knife from your SAI collection that this knife can do the job.
The Global GS-101 makes quick work of slicing meats, such as roasts and ham.
The G-82 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender. We recommend pairing the G-82 with one of Global carving forks, either the G-13 or the GF-24 to make a matching set. Fluted to prevent food from sticking to the blade.
The Global GS-60 15cm Utility knife is ideal for slicing, dicing and cutting. the narrow blade makes it suitable for filleting.
The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

This paring knife is a good little utility knife to have around. Similar to the GSF-15 but with a hollow handle you can use this knife for cutting and slicing.
The GF-37 is Global's fully forged carving knife. It features a long 22cm blade, which can easily slice through the best cuts of meat. the addition of a bolster gives a bit of extra protection. With a long narrow blade the knife can also be used for filleting fish, slicing fish or preparing sashimi. It makes a poor chopping knife, because the blade is in line with the bottom of the bolster, meaning the knife can only really be used for slicing by drawing the knife backwards.

Like the Yanagi Sashimi knife the Tako sashimi knife is a specialist Japanese blade for slicing fish. It is discernible from the regular Yanagi Knife by the flat end to the blade. Specifically the Tako part stands for octopus in English. The knife is generally used in the Tokyo area of Japan as a octopus slicer, but the knife can be used to fillet and medium sized fish.
Like other traditional Japanese knife blades, this knife has a bevel on only one side of the blade, to help achieve even slices.

The GF-98 Global Forged Cook's Knife 20.5cm Blade is one of Global's fully forged chef's knives. An incredibly versatile knife, it is ideal for preparing meat or vegetables. As a chef's knife it can be used to perform most kitchen tasks and is particularly suited to a commercial kitchen. The GNM-09 is a specialist bread knife and really can only be used for this purpose. The GNM-09 was created as the original bread knife the GN-004 did not fit so well into some of the smaller blocks. The GNM-09 is comparable to the popular G-9 knife in the Global classic range and makes a fine addition to any set.
The G-97 is Global's classically shaped bread knife. It is 2cm shorter than the G-9. It is a specialist knife, really for use with bread only. The teeth are made to saw through the crust of bread but could also be used for some tough meats, for example crackling. The funny thing is, the Japanese do not really eat bread and so it is one of those products that they never really understood! If you look closely at the knife blade you will see that on the face of the knife, the teeth have a chamber whilst on the back of the knife, the face is flat. When you cut into bread, you will automatically cut inwards in a curve rather than straight down and the chamber is there to help correct this so that your slicers will be more of a similar thickness all the way through. Whilst the G-97 can be used by left handers, the set up is right handed.

It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives. The GSF-24 has quite a long 15cm blade, which gives it better use towards slicing and carving meat. Nevertheless an all-round performer which can be used for most kitchen tasks.
A Yanagi is a specialist Japanese knife for slicing pieces of fish for sushi and sashimi. The long blade is to allow the chef to make long broad strokes to make sure that the cut is made in one go. Global's Yanagi Sashimi slicers are ground in typical Japanese fashion with a single bevel on the face of the knife. The single bevel is to allow professional chefs more control to control the thickness of the sashimi slices and make sure the cut is perfect for presentation.
Global make two versions of the Yanagi Sashimi, the G-11 has a 25cm blade and the G-14 has a 30cm blade.

The Global SAI Santoku knife is a really big powerful knife suited for the 3 ways of Sanoku, slicing, dicing and mincing. The SAI-03 is one of the heavist Santoku knives in the Global range. It is really good for chopping vegetables as it has quite a flat profile, but can be used as well for slicing meat. As the knife is so heavy it is a lot stronger than standard Global knives and will take a lot of punishment. A smaller version of the Santoku knife is available as the SAI-M03, at 13.5cm is brilliant for smaller veg.
The G-22 and G-23 are rather large bread knives with a 20cm and 24cm blade respectively. These knives are alternatives to the classically shaped bread knife the G-9. These blades are much deeper than the G-9 and are basically serrated versions of the G-2 and G-16 cook's knives and so whilst they are labelled as bread knives, they could equally double up as serrated chef's knife. The deeper serrated blade will make it better at cutting through larger than usual loaves of bread such as big sourdoughs or tough bread such as rye or black bread which are typically baked to be quite deep. However due to the size and profile of the knife with its tapered point, it would make a great knife for cutting up any large fruits or vegetables with tough husks, such as pumpkin, coconut and pineapple. A good knife to have for tougher jobs in the kitchen.

A Yanagi is a specialist Japanese knife for slicing pieces of fish for sushi and sashimi. The long blade is to allow the chef to make long broad strokes to make sure that the cut is made in one go. Global's Yanagi Sashimi slicers are ground in typical Japanese fashion with a single bevel on the face of the knife.
