Most Western chef’s knives are built with a full tang. This means the blade steel extends all the way through the handle, with handle scales riveted to each side. To balance the knife, manufacturers rely on the weight of the tang, the handle materials and often a thick bolster between the blade and handle.

While effective, this method has limitations. Balance is largely determined by the dimensions and density of the materials used which leaves relatively little opportunity for fine adjustments.

GLOBAL took a completely different approach. The creative visionary and GLOBAL knife designer Komin Yamada developed a revolutionary kitchen knife design in 1985 and, over 40 years since its debut, GLOBAL knives remain a kitchen staple all over the world.

By adjusting the amount of sand inside the handle, we are able to fine-tune the balance of each knife with a level of precision that’s difficult to achieve using the traditional full tang construction method.

Every knife shape is different. A 20cm chef’s knife has a very different weight distribution to an 8cm paring knife or 30cm sashimi knife.

With the traditional full tang, achieving the ideal balance depends on changing the dimensions of the tang, thickness of the bolster and the handle materials. These changes are all limited by the knife’s overall design.

GLOBAL’s hollow handle system gives engineers another level of control. Rather than relying solely on the steel itself, they can adjust the internal weight to complement each blade design. This allows each finished knife to feel consistently balanced across the range, despite the different blade lengths, widths and thicknesses.
