GLOBAL Z: What DLC (Diamond-Like-Carbon) really does for kitchen knives?

by Georgia Metcalfe on Nov 06 2026

What is the GLOBAL Z Range?

GLOBAL have been making award-wining stainless steel knives that revolutionised the kitchen knife industry for over 40 years. The GLOBAL Z (GZ) is the next chapter: the first all stainless steel kitchen knives with a Diamond-Like Carbon coating.

GZ is a ground breaking range of Japanese knives combining GLOBAL’s classic all stainless steel structure, dimpled handles and minimalist design with cutting-edge technology used in the motorsport and aerospace industries: DLC (Diamond-Like-Carbon).

What is DLC Coating?

DLC, or Diamond-Like Carbon, is a treatment that protects the knife with a hard, diamond like outer layer. The technology is used in the aerospace and motorsport industries as it makes the steel surface harder, more durable, resistant to acids and more corrosion resistant. The coating is biocompatible which is why it also appears in medical equipment.

In a kitchen knife, DLC is not a paint or plating but a surface treatment that protects the steel underneath for a more durable surface. Another benefit of the DLC coating is that it creates a smoother blade, allowing for friction-free cutting with clean, straight slices.

This revolutionary technology gives GLOBAL Z Japanese steel knives a distinctive matte black surface for chef’s who want a knife that looks as good as it cuts.

Six Benefits of DLC Coating on a Kitchen Knife

A harder, more durable surface

The DLC layer reinforces the steel, making the surface more resistant to scratches, wear and everyday knocks than uncoated steel.

Longer lasting sharpness

A harder surface helps the blade keeps its razor-sharp edge for longer, which means few sharpening sessions, a real advantage for anyone who cooks daily.

Better corrosion & stain resistant

The DLC coating creates a barrier against food acids, moisture and salt protecting against rust and wear for extended performance.

Effortless, non-stick cutting

The smooth surface reduces friction so the blade glides through dense or starchy foods with less drag and reduced food sticking.

Biocompatible & safe

The DLC coating meets the highest industry standards, in fact it’s is so safe it’s used in medical equipment. Combined with GLOBAL’s one piece construction (which eliminates crevices for food particles to collect) the GZ range makes for an extremely hygienic knife.

Striking matte black finish

DLC provides a deep, non-reflective black finish which is scratch resistant making for a sleek, modern look.

DLC Coated Kitchen Knife vs Stainless Steel Knife

Our GLOBAL Z range use the same award-wining design and Japanese forged Cromova 18 stainless steel construction as our classic GLOBAL knives for an ultra-sharp blade that stands the test of time. However, DLC adds reinforces the steel for a more durable blade, longer lasting sharpness and a smoother cut.

The GZ-2 Cook’s Knife 20cm

The GZ-2 was the first kitchen knife made entirely of stainless steel with a Diamond-Like Carbon coating.

The cook’s knife from GLOBAL Z is an evolution of GLOBAL’s classic G-2 Cook’s Knife. The difference is that Global Z features a DLC surface treatment, giving the knife a black protective coating that not only looks stunning but also delivers exceptional performance.

What makes GLOBAL Z the perfect gift for chefs and cooking enthusiasts?

The GLOBAL Z kitchen knife range is perfect for gifting because each knife is individually numbered, and due to the complex and extensive manufacturing process, only a limited number of these exclusive knives are produced each year.

Presented in a premium gift box, GLOBAL Z black Japanese steel knives are a limited edition gift forged with cutting edge technology, perfect for the chef who has everything!

How to care for a DLC Japanese knife?

Be kind to your knife. Always wash it by hand after use. Use mild dish soap and warm water, and ensure that the knife is completely dry before storing. For fingerprints, we recommend using the enclosed polishing cloth.

DLC Coating FAQ

What does DLC stand for?

DLC , Diamond-Like Carbon , a hard low=friction coating bonded to the steel surface.

Is DLC coating food safe?

Yes. The DLC coating is chemically stable, biocompatible and non-toxic which is why its used in medical equipment. This means it is completely safe for food preparation.

Is DLC rust resistant?

Yes. The DLC coating creates a barrier against food acids, moisture and salt protecting against rust.

Can you sharpen a DLC coated kitchen knife?

Yes. You can sharpen the edge normally on a whetstone or pull-through sharpener just like a standard knife. The stone will grind away the metal at the edge, while the DLC layer on the flat of the blade remains untouched.

Does DLC coating scratch or wear off?

DLC offers superior scratch and wear resistance compared to plain steel. However, it can eventually wear under extreme, prolonged use.

Is GLOBAL Z limited edition?

Yes. Due to the complex and extensive manufacturing process, only a limited number of these exclusive knives are produced each year. Each knife is individually numbered making for a unique blade.
