The G-46 Santoku Knife 18cm is Global's full sized Santoku knife. Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The fluted edge prevents pieces of vegetable becoming stuck to the blade, this is because pockets of air in the fluted area of the knife stops the vegetables from sticking as you cut.

The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku. Having actually laid the G-46 Santoku knife next to this blade, the difference between the knives is minimal, the difference being the slight absence of a Santoku's lambs foot ending. So this knife could also be described as a 16cm Santoku knife.
Consider as an alternative to a G-2, or a vegetable chopper. The G-64 is also offered as the same blade with fluting.

Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

The GS-90 is a mini Santoku knife and is identical to the smaller brother of the G-80, it is the fluted version of the GS-35. Useful for cutting up small vegetables and fruit, a Santoku knife is used for slicing, dicing and mincing. They make good multipurpose knives for all round use.
Global SAI has two vegetable knvies in its range. The SAI-04 is a specialist vegetable chopping knife. It has a long flat blade designed to get a clean cut when the knife cuts down onto the board. It is quite a heavy knife and suitable for long hours in the kitchen. With its long 19cm blade and the stretched handle of the SAI series, the SAI-04 knife is the largest vegetable chopper Global produce. It has a smaller brother the SAI-M06, which home users will find a bit more manageable as it has only a 15cm length. This makes it more similar to the popular G-5
The GF-36 is the fully forged version of Global’s extremely popular G-5. The shape of the knife is specifically intended for chopping vegetables. The GF-36 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. The front of the blade has a slight upward curve for slicing and dicing vegetables.
We recommend the GF-36 for professional chefs who do a lot of chopping in the kitchen. This knife will take a lot of punishment and is a lot more robust than its cousin the G-5.
As a fully forged knife the GF-36 has the same blade as the G-5, but is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence that the G-5, which is great if you think Global knives are a bit too light.
The G-10 is a specialist salmon slicer. It has a really long and thin flexible blade that makes it suitable for this purpose only. These knives are typically used for cutting pieces of smoked salmon or trout, the blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented.
The handle is the same as other G series knives and is comfortable to hold. There is a gap of about a inch from the handle where the blade is not sharpened to provide a bit of protection. This is the longest knife blade that Global produce and as such does not fit in any of the blocks and also may not slot in a drawer. Ideally it needs to be put on a magnetic rack.
The G Series of Global knives is a classic collection of large longer bladed knives with weighted hollow handles, used for general food preparation. All knives are made in two parts with the blade and the handle being welded together. The blade itself is made of Cromova18, Global ’s special blend of Molybdenum Vanadium steel, which makes the knife hard compared to European blades and able to retain a decent edge for a long time. Global ’s special feature though is that the knives are ground down to a very acute angle (15 Degrees) down the face of each side of the blade. Rather than having a beveled edge, this is how Global knives are renowned for being so sharp and for staying sharp for such a long time. Global were one of the first Japanese brands into the UK market and have built up a cult following and the brand is well recognized. Always wash your knives by hand, dry thoroughly and never put them in a dishwasher. All Global knives are covered by the manufacturers guarantee against faults and defects. The G-47 is essentially a Western style version of the Yanagi Sashimi Slicer and works the same way. The G-47 knife has the typical 15 degree bevel on each side of the blade as per the standard G series. It can be used for a number of kitchen tasks. It makes a great carving knife and is perfect for slicing big pieces of your favorite cut of meat. It also makes a good fish filleting knife or for use making sashimi.
Like the Yanagi Sashimi knife the Tako sashimi knife is a specialist Japanese blade for precision slicing raw fish. It is discernible from the regular Yanagi Knife by the flat end to the blade. Specifically the Tako part stands for octopus in English. The knife is generally used in the Tokyo area of Japan as a octopus slicer, but it can be used as a filleting knife for medium sized fish.
Like other traditional Japanese knife blades, this knife has a bevel on only one side of the blade, to help achieve even slices.
The GS-4 is Global's small version of the Deba Bocho knife, a small version of the G-7 Deba, a Japanese style kitchen knife used to cut mostly fish but also meat. This knife has the traditional Japanese one sided grind so is not suitable for Western style preparation. It can be used for cutting, filleting and slicing smaller fish. A perfect small utility knife for Japanese chefs who use a larger Sashimi or Deba knife and need something for lighter work.
The smallest of the Global Ni santoku knives, the GNS-03 should be seen more of as a petty knife suitable for little kitchen task as a utility knife. A really nice all round knife to complete sets.
