As a chef's knife the G-4 is suitable for most kitchen tasks, slicing, dicing and chopping. There is very little difference in performance between the G-4 and the classic chef knife, the G-2. The difference is cosmetic, i.e. the kink in the blade. This gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of cook's knife. It does have a nice upward curve to the blade, which when cutting with the knife allows it to rock up and down on the chopping board, a bit like a mezzaluna.
The shape has been so popular that the second new series of Global knives, the Global NI series, has been based on this knife design. The G-4 also comes in a fluted version as the G-66 and in a smaller size as the GS-58.

The GSF-49 is very similar to the GSF-22 the main difference being a slightly deeper blade. The blade has a slight hilt which gives you more height for cutting over the GSF-22, this is a slight improvement but in truth there is very little difference between this knife and the GSF-22. The knife is an excellent all round performer and can do any kitchen task.
The GSF-46 is virtually identical to the GSF-15, but it has a slightly deeper blade. These small paring knives are perfect for little kitchen tasks like cutting up fruit or taking the eyes out of potatoes.
The biggest brother of the GSF-15 and GSF-22, the GSF-24 is the largest forged utility knife in the Global range. It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives. The GSF-24 has quite a long 15cm blade, which gives it better use towards slicing and carving meat. Nevertheless an all-round performer which can be used for most kitchen tasks.
The GSF-23 is one of a few steak knives made by Global and is great for use in tucking into big juicy fatty Rib eyes and Sirloins. It will saw effortlessly through fatty pieces of meat to give you nice clean cuts. In fact this knife has more in common with the other GSF utility knives than other steak knives as the main feature of the blade is the subtle serration in the blade. This makes the knife ideal for steaks but also works well as a utility knife for softer fruits and vegetables. It would make a great tomato knife, so is a multi function blade.
The GSF-22 has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11 (the hollow handled version). It is a brilliant knife and often included in various combination products. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.
The GSF-17 is Global's main small peeling knife. It is a knife with a very specific purpose; to peel and turn as many vegetables as you can get your hands on! The small curved blade makes the knife practical for working around spherical objects like potatoes and apples. There is a small notch in the handle to provide grip and control to work around bumps and grooves, the sharp blade will work through tough skin on sweet potato and other root vegetables.
