These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.
The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.

This knife is something between a paring, utility and chef's knife. It has a really flat blade edge which makes it good for getting clean cuts through fruit and veg. A hollow handle version of the GSF-16.
The SAI-F01 is a fully forged small blade similar to the GSF series in the classic Global line. This makes the knife small but strong and good for all those little kitchen task, such as peeling, taking the eyes out of potatoes, or just cutting up little bits of fruit. Being a fully forged blade the handle is quite flat as the similar SAI-S01 has a hollow handle. The fully forged SAI-F01 is more durable in that sense but not as comfortable to hold in the hand.
This paring knife is a good little utility knife to have around. Similar to the GSF-15 but with a hollow handle you can use this knife for cutting and slicing.

The difference here is that the S01 has a longer hollow handle. This makes the knife a bit more comfortable in the hand, but the handle with the thumb rest forces you to hold the knife in a certain way and we would suggest that makes this paring knife a better cutting and slicing knife than the F01.
