The G-3 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender. 

The GF-24 will hold your joints of meat securely in place while you carve your pieces of meat. The two tines on the end can be inserted into the meat to check that the meat is cooked as the juices run clear.

The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku.

G-4 | 18cm Oriental Cook's Knife - The G-4 chef's knife is versatile for most kitchen tasks such as slicing, dicing, and chopping. Its performance closely matches that of the classic G-2 chef's knife, with the primary difference being aesthetic—the slight kink in the blade. This design element gives the knife an 'oriental' appearance but does not affect its functionality. Contrary to its appearance, the G-4 is not tailored specifically for oriental cuisine or techniques; rather, it offers a different shape compared to traditional chef's knives. Its gently curved blade facilitates a rocking motion while cutting, similar to a mezzaluna on a chopping board.

G-58 | 11cm Cook's Knife - The G-58 knife, measuring 11 cm, is a slightly smaller version of the same knife, featuring the large G series handle. The shorter blade offers better control and may feel less intimidating, especially for those with smaller hands. Regardless of size, all these knives perform the same tasks in the kitchen, making the choice largely a matter of personal preference.

GS-110AN | 15cm Kiritsuke Knife - The newest addition to the Global family, is the GS-110, a small 15cm Kiritsuke Knife. A Kiritsuke Knife, traditionally much larger and over 24cm in length is used by Japanese head chefs as a multipurpose knife for slicing. Kiritsuke knives typically have very straight blades, like the Japanese Usuba vegetable knives, but with the longer blade of a Yanagiba knife. Such knives are hard to use and are usually only wielded by the most skilled Japanese chefs as a symbol of status. Our small Kiritsuke pays homage to the true knife, with a slightly curved blade to aid general cutting and function as a small chef's/cook's knife.
