The name 'UKON' has many positive connotations in Japanese legend. Our favourite use of the word lies in the expression 'Tachibana No Ukon' referring to the Mandarin Tree that was symbolically planted on the right-hand side of the Imperial Palace in Kyoto. It was said to balance the Cherry Blossom Tree on the left-hand side, known as the 'Sakura No Sakon'. Together they replaced the Samurai Guards who had until then protected the Emperor, but who were deemed no longer necessary during times of peace.
In true GLOBAL tradition, the knife is constructed from the best Stainless Steel material and the UKON series features thicker blades to enhance performance. UKON knives are subject to even more precise grinding and finishing work, making them 10 percent sharper out of the box. The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
The Ukon 6-Piece Knife Block Set is a real showpiece! It features a stylish and contemporary stainless-steel and black design that will complement any kitchen setting. The knife block includes the GU-01 20cm Chef’s Knife, the GU-03 22cm Bread Knife, the GUM-10 14cm Vegetable Knife, the GUS-22 15cm Scalloped Utility Knife and the GUF-30 9cm Paring Knife.

Earth or Tsuchi represents the hard solid objects of the world, the most obvious examples being rock and stone. Earth stands for stability and is highly resistant to movement or change.
Our Global Tsuchi sets stand proud a firm, like a rock with a sloping universal block holding knives firmly in place.
Our Tsuchi sets represent vegetables in cuisine. Each knife block set highlights the G-46 Santoku Knife, which is a multipurpose cook’s knife, but acts as a great vegetable knife.

This set contains Global’s G-77 which is a medium-sized Cook’s knife 20cm blade that will perform a variety of kitchen tasks. Having a decent sized blade makes it brilliant for chopping, slicing and dicing, whether cutting up vegetables or slicing meat. It features the new improved flutes on the blade which prevents food from sticking to the blade making it a very easy to use Cook’s knife. The second piece in this set is the classically shaped bread knife, the 22cm G-9. It is a specialist knife and is only supposed to be used with bread. However, the teeth are made to saw through even the toughest of bread crusts and it could also be used on some tough meats, for example crackling. The third piece is the G-82 fluted Carving knife 21cm. The shape of the blade and improved flutes make it ideal for cutting up shawarma, shredding duck or mincing meat. The flutes allow faster and more efficient cutting preventing food from sticking to the blade making it ideal for professional kitchens.
The next two pieces are the GS-36 & GS-38, these are the Global GS series knives within the block. The Global GS series which is smaller than the G series and have angled handles that help when attempting general preparation and small intricate tasks which need smaller blades. the GS-36 is a 12cm utility knife which is the go-to knife for all small jobs in the kitchen and the GS-38 which is a 9cm paring knife. The collection is then completed with the Global GKS-210 kitchen scissors. They feature heavyweight cast steel handles and feel very substantial whilst held. The steel blades are thick and strong and contain small teeth to help grip chicken fillets and other meats. Between the handles, you will also fit a nutcracker. These scissors will also fit into the butcher's steel slot on most ship-shape type Global blocks.
The G-4 chef's knife is well-suited for a variety of kitchen tasks, including slicing, dicing, and chopping. Its performance is nearly identical to the classic G-2 chef's knife, with the main difference being its appearance. The G-4 features a kink in the blade, giving it an 'oriental' style, but this design does not affect its functionality or make it specifically for oriental cuisine. The upward curve of the blade allows for a rocking motion on the chopping board, similar to a mezzaluna, making it efficient for various cutting techniques. The design has gained such popularity that it inspired the creation of the Global NI series, the second new series of Global knives. Additionally, the G-4 model is available in a fluted variant, known as the G-66, and in a smaller size as the GS-58.
The GS-58 Oriental Cook's Knife features an 11cm blade, designed for precision. Ideal for various kitchen tasks, it excels at slicing, dicing, chopping, and other detailed work.
The GS-110AN is a beautiful 'Kiritsuke' shaped knife, useful for many tasks in the kitchen. Our small Kiritsuke features a slight curve for easier cutting, making it a versatile tool for chefs.

The GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work.
The biggest brother of the GSF-15 and GSF-22, the GSF-24 is the largest forged utility knife in the Global range. It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives.
This is the best set of knives in the entire Global collection. A premium selection of Global's elite range of SAI knives presented in a specially branded SAI steel ship shape block. Earth, also known as 'Tsuchi,' symbolizes the firm, solid elements found in our world, with rock and stone being the most evident manifestations. It signifies constancy and possesses a strong resistance to alteration or motion.
In our Tsuchi knife sets, we emphasize their suitability for culinary use, particularly when handling vegetables. Each knife set features the versatile G-46 Santoku Knife, which excels not only as a multipurpose cooking tool but also as an excellent choice for cutting vegetables.

The G-3 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender.
The GF-24 will hold your joints of meat securely in place while you carve your pieces of meat. The two tines on the end can be inserted into the meat to check that the meat is cooked as the juices run clear.
The G-57 is a chef's knife and like the standard Global chef's knives can perform most roles in kitchen. The G-57 is set apart from the other chef's knives by its deeper blade. So the knife is more predisposed towards chopping vegetables. If you just needed one knife for the kitchen, but that vast majority of what you are doing is cutting vegetables, we would recommend this blade. It is quite similar to a Santoku knife, in fact it's halfway between a classic chef's knife shape and a santoku.
In Japanese culture, the element of fire symbolizes not only the essence of life but also embodies qualities like passion, longing, and vitality. Fire plays a pivotal role in the culinary world and is seen as a reflection of one's inner emotions.
Fire finds its culinary representation in the preparation of meat. Our knife set includes the GS-105, an Oriental cook's knife inspired by the classic Japanese Gyuto knife, along with the distinctive G-2 Chef's knife, both tailored for various culinary needs.
This 3 piece boxed set is the latest box set to be released from Global as part of the Autumn Nakiri promotion. It is an ideal starter set for someone who is new to cooking or perhaps even a chef that needs just a few knives to get started in the kitchen. It has a 20cm Chef's knife with a fluted edge, it is a great all rounder in the kitchen and is particularly good for cutting meat because of its size and its fluted edge which stops the meat from sticking to the blade. The Japanese concept of wind underscores the notions of liberty and motion, signifying the potential for growth and expansion, be it in the context of the atmosphere or the human intellect.
In the realm of cuisine, air is symbolized by poultry, and our Global Kaze 3 piece knife set draws inspiration from blades designed for poultry preparation. The knives within the Kaze collection feature fluting, which creates air pockets on the blades, effectively preventing food from adhering to them.

The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
The GS-11 is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose.
Global Knives, crafted in Japan to impeccable standards, feature Cromova 18 stainless-steel blades known for their razor-sharpness, hollow weighted handles, and a 15-degree convex cutting edge. Renowned for their distinctive design, these knives have maintained their popularity over the years. To mark their 40th anniversary, Global has introduced a selection of limited-edition knives and knife block sets.
Global's limited edition 40th Anniversary 7 Piece Knife Block features the iconic 'ship shape' knife block set, with 6 of the most popular knives from Global.
The Global 40th Anniversary 7 Piece Knife Block Set includes:
G-4 | 18cm Oriental Cook's Knife - The G-4 chef's knife is versatile for most kitchen tasks such as slicing, dicing, and chopping. Its performance closely matches that of the classic G-2 chef's knife, with the primary difference being aesthetic—the slight kink in the blade. This design element gives the knife an 'oriental' appearance but does not affect its functionality. Contrary to its appearance, the G-4 is not tailored specifically for oriental cuisine or techniques; rather, it offers a different shape compared to traditional chef's knives. Its gently curved blade facilitates a rocking motion while cutting, similar to a mezzaluna on a chopping board.
G-58 | 11cm Cook's Knife - The G-58 knife, measuring 11 cm, is a slightly smaller version of the same knife, featuring the large G series handle. The shorter blade offers better control and may feel less intimidating, especially for those with smaller hands. Regardless of size, all these knives perform the same tasks in the kitchen, making the choice largely a matter of personal preference.
GS-110AN | 15cm Kiritsuke Knife - The newest addition to the Global family, is the GS-110, a small 15cm Kiritsuke Knife. A Kiritsuke Knife, traditionally much larger and over 24cm in length is used by Japanese head chefs as a multipurpose knife for slicing. Kiritsuke knives typically have very straight blades, like the Japanese Usuba vegetable knives, but with the longer blade of a Yanagiba knife. Such knives are hard to use and are usually only wielded by the most skilled Japanese chefs as a symbol of status. Our small Kiritsuke pays homage to the true knife, with a slightly curved blade to aid general cutting and function as a small chef's/cook's knife.
GS-38 | 9cm Paring Knife - The GS-38 is a beautifully designed paring knife perfect for various small kitchen tasks. It serves as a hollow handle counterpart to the GSF-15 and is commonly included in newer knife sets. Its ergonomic hollow handle ensures comfortable handling, enhancing the overall user experience.
GS-55 | 12cm Fluted Oriental Santoku Knife - The GS-55 Oriental Santoku knife features flutes that prevent food from sticking to the blade while cutting. It's ideal for slicing, dicing, and mincing, making it perfect for small vegetables and fruits. This versatile knife is an excellent all-purpose tool for various kitchen tasks.
GS-61 | 16cm Bagel/Bread Knife - The GS-61 is suitable for most types of bread and is a more affordable alternative to the full G-9. Additionally, it serves well as a utility knife for vegetables with tough skins and soft interiors, making it excellent for slicing large tomatoes.
The Japanese concept of water symbolizes the qualities of fluidity, movement, and shapelessness within our environment. Water represents the capacity for adjustment and transformation. Additionally, plants fall under the category of 'sui/mizu' because they demonstrate adaptability to their surroundings.
In culinary terms, 'mizu' finds its representation in fish and seafood. Our Mizu knife set includes a G-4 knife, symbolizing the flowing nature of water, and the GS-11 flexible utility knife, which is ideal for precise filleting. The Mizu set is versatile and suitable for preparing a wide range of foods.
New for summer 2017 and available at a special price is a beautiful 3 piece set from Global Knives. A really good starter pack for any aspiring chef or for a Global knife enthusiast looking to add to their collection.
