The G-102 Global Cheese and Herb Chopper is a delightful little tool which is the smaller version of the G-12 meat cleaver. The GS-11 Flexible Utility Knife is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature. A fluted version of this knife exists as the GS-36.
The GS-13 is quite similar to the GS-11 and is a sister knife to it. The GS-13 has very slight serrations along the edge of the blade. Not as pronounced as a fully serrated blade, we find that these small serrations actually work really well with fruit that has a firm skin, but watery center where you do not want the contents to go flying everywhere! The serrated blade is able to saw through the skin while keeping a very clean cut. We feel that this works particularly well with tomatoes, plums, nectarines and grapes. The knife is a utility knife though and can be used for most kitchen tasks.
The GS-14 is basically the GS-11 with large serrations in the blade. A multi function knife, the serrations allow the utility knife to cut through tougher materials such as bread or allow it to be used with fruits and vegetables with thick skins and soft centers. The knife has a medium sized blade meaning that it will be used often and makes a great addition to any set without a bread knife or just for those who do not use bread knives very often and need something to make do.
The little brother to the G-1, featuring the classic GS Global handle, the GS-2 has the same blade, but shorter at 13cm. The round end to the blade allows you to slice into boney meat like chicken and duck without the tip of the blade catching in the bone. The GS-2 is basically the GS-3 with a rounded end and therefore can also be used as a general purpose cook's knife for cutting and chopping.

A nice wide Spatula from Global knives good for turning food on a grill or frying pan. Nice and flexible to weave under something, it is convenient for soft food that can fall apart like fish.
The biggest of the Global spatula range, the GS-27 has a large fanned blade with holes in, which makes this spatula particularly good fro cooking with larger items that are either greasy or tend to fall apart like whole fish. The slanted edge gives a good angle to section of slices or push away grease.
These fish bone tweezers are for removing small bones from raw fillets of fish. The GS-29 has a fatter design that the other tweezers in the range from Global, giving a comfortable thumb grip. The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blades are more curved like a chef's knife, to allow the knife to be rocked gently forward after each cut and encourage good technique. A really popular blade often found in Global sets, the GS-5 is also available in a fluted style as the GS-39.

The chef's knife is an absolute essential for any kitchen. This GS-58 Oriental Cook's Knife 11cm blade has a smaller blade for more precision and is suitable for most slicing, dicing and chopping kitchen tasks. The attractive kink in the blade gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of chef's knife. It does have a beautiful upward curve to the blade, which when cutting allows the knife to rock up and down on the chopping board, a bit like a mezzaluna.

What is a bagel knife? Well it took a long time to explain to our Japanese suppliers what a bagel was and why we eat so many of them. Apparently it is a very American/British thing. Really the Global range was missing a small bread knife, as the GS series contained everything but a small bread knife. At 16cm it is good enough for most loaves of bread and it is also a cheaper option than buying the full G-9. It also doubles up as a good utility knife for vegetables that have a hard skin and soft center. So it is excellent for slices of large tomatoes as well.
We realized that some of our smaller Global blocks could not fit the large bread knife, so if you have the smallest size of ship shape block, the GS-61 is a god option.

These small scalloped knives are labelled as tomato knives as they are made precisely for cutting through fruits and vegetables with hard to break through skin. Most obviously tomatoes, but also kiwis, plums, grapes etc. These knives work really well when the center of the fruit is really soft or watery, where putting pressure on the fruit as you cut through could cause an explosion of its contents everywhere! Having a serrated knife will make things a bit easier. The blade is quite short, so these knives are not really useful for bread.

The GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work. This knife can cover all the tasks of the other GSF range and is a classic all-rounder. Its fully forged blade is strong enough to get into and separate meat joints and can put up with a certain amount of twisting and levering, just don't use it as a screwdriver or to open jars of paint!
The GFS-16 works well as a peeling knife or paring knife and is sort of between both. The down-turned tip of the blade is said to resemble the shape of a lamb's foot because of the curved edge and flat blade. For those wanting a proper peeler, we suggest the GSF-17 as it has a fully curved blade, but if it is a choice between a GSF-17 and a GSF-15, the GSF-16 is a good compromise and can be used for most small kitchen tasks.
The GSF-17 is Global's main small peeling knife. It is a knife with a very specific purpose; to peel and turn as many vegetables as you can get your hands on! The small curved blade makes the knife practical for working around spherical objects like potatoes and apples. There is a small notch in the handle to provide grip and control to work around bumps and grooves, the sharp blade will work through tough skin on sweet potato and other root vegetables.
The GSF-18 is a knife specially designed for use with shellfish, we would not really recommend it for any other use. The short blade is designed to get inside the shell of an oyster or scallop to cut the connection between the two halves of the shell. The short blade is designed to withstand this heavy kind of twisting, where a longer knife might break.
The GSF-22 has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11 (the hollow handled version). It is a brilliant knife and often included in various combination products. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.
The GSF-23 is one of a few steak knives made by Global and is great for use in tucking into big juicy fatty Rib eyes and Sirloins. It will saw effortlessly through fatty pieces of meat to give you nice clean cuts. In fact this knife has more in common with the other GSF utility knives than other steak knives as the main feature of the blade is the subtle serration in the blade. This makes the knife ideal for steaks but also works well as a utility knife for softer fruits and vegetables. It would make a great tomato knife, so is a multi function blade.

It is a bit of an odd knife, it is really a bit big to sit in the GSF category, but shares the same profile and flat handles of the other GSF knives. The GSF-24 has quite a long 15cm blade, which gives it better use towards slicing and carving meat. Nevertheless an all-round performer which can be used for most kitchen tasks.
The GSF-46 is virtually identical to the GSF-15, but it has a slightly deeper blade. These small paring knives are perfect for little kitchen tasks like cutting up fruit or taking the eyes out of potatoes.
The GSF-49 is very similar to the GSF-22 the main difference being a slightly deeper blade. The blade has a slight hilt which gives you more height for cutting over the GSF-22, this is a slight improvement but in truth there is very little difference between this knife and the GSF-22. The knife is an excellent all round performer and can do any kitchen task.
