Global produce a few different styles of palette knives to compliment the Global collection. The GS-21 are the 'flat' palette knives, i.e. the blade lies horizontally with the handle of the knife. The GS-11 has a medium sized blade at 11cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose.
The GSF-15 is the most popular petty knife in the Global range and is very often found in set combinations. The GSF-22 has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11 (the hollow handled version). It is a brilliant knife and often included in various block sets. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.

GS-110AN | 15cm Kiritsuke Knife - The newest addition to the Global family, is the GS-110, a small 15cm Kiritsuke Knife. A Kiritsuke Knife, traditionally much larger and over 24cm in length is used by Japanese head chefs as a multipurpose knife for slicing. Kiritsuke knives typically have very straight blades, like the Japanese Usuba vegetable knives, but with the longer blade of a Yanagiba knife. Such knives are hard to use and are usually only wielded by the most skilled Japanese chefs as a symbol of status. Our small Kiritsuke pays homage to the true knife, with a slightly curved blade to aid general cutting and function as a small chef's/cook's knife.

The GNM-09 is a specialist bread knife and really can only be used for this purpose. The GNM-09 was created as the original bread knife the GN-004 did not fit so well into some of the smaller blocks. The GNM-09 is comparable to the popular G-9 knife in the Global classic range and makes a fine addition to any set.
Global Ni produce 3 different sizes of vegetable knife. These knives all feature flatter blades designed to cut down through vegetables and give clean cuts. Choose between a GNM 08 - 16cm, GNM 07 - 15cm and GNM 06 - 14cm size. These knives are based on the popular G-5 and GS-5 Global classic vegetable choppers. These knives are more or less identical in shape to the cook's and santoku knives, so do consider these as alternatives. There is also a 14cm fluted vegetable chopper available in a 14cm size, the GNM-01.
The GNFS-01 has a fully forged blade with a flat handle similar to the GSF-15 in the classic Global series. The knife is small but strong to be used for all those little kitchen tasks, including cutting small fruits and peeling vegetables.

Global's large handle slicer knives come in two sizes, the G-1 at 21cm and the G-6 at 18cm, there is also a small handle equivalent, the GS-2. It is listed as a slicing knife, or slicer knife because of its rounded blunt end. It is very similar to the G-2 in that sense, but is designed for cutting meat into pieces, the idea behind the blunt end is that the tip does not nick or catch as you are slicing through meat and you can smoothly roll it into the cut. These slicing blades work particular well on meat that is close to the bone, such as chicken or duck. Nevertheless the size and shape of the knife lend it to being another all-rounder and this Global knife can be used as a multipurpose knife for cutting up vegetables.
The G-10 is a specialist salmon slicer. It has a really long and thin flexible blade that makes it suitable for this purpose only. These knives are typically used for cutting pieces of smoked salmon or trout, the blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented.
The handle is the same as other G series knives and is comfortable to hold. There is a gap of about a inch from the handle where the blade is not sharpened to provide a bit of protection. Many Japanese knife manufacturers traditionally produced a specialist knife with one-side grinding known as “Kiritsuke”. It required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to use one. The Kiritsuke Knife thus became considered to be a symbol of expertise, status and seniority.
Feeding off this tradition, Global ® Knives proceeded to engineer a Double-Edged version of the Kiritsuke in their Classic series to fashion a very versatile knife. This knife can be used to perform most of the tasks normally done with a Gyuto or Chef’s Knife, but also those of the Nakiri and Sujihiki. It has less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting action. The tip of the blade is particularly suitable for fine dicing and chopping.

A Yanagi is a specialist Japanese knife for slicing pieces of fish for sushi and sashimi. The long blade is to allow the chef to make long broad strokes to make sure that the cut is made in one go. Global's Yanagi Sashimi slicers are ground in typical Japanese fashion with a single bevel on the face of the knife. The single bevel is to allow professional chefs more control to control the thickness of the sashimi slices and make sure the cut is perfect for presentation.
Global make two versions of the Yanagi Sashimi, the G-11 has a 25cm blade and the G-14 has a 30cm blade.
Global knives are supposed to be refined, delicate instruments for preparing food to exact specifications.... not the meat cleaver. It has one real purpose, to smash through bones to cut up portions of meat. The Global meat cleaver features a longer blade and thicker steel than ordinary G range knives to handle the repeated blows of going through bone and onto a hard cutting surface. Compared to most Global knives, it is the only knife which should be swung down like a hammer. Useful for preparing cuts of chicken, creating lamb chops or spare ribs. The knife has a long narrow blade with is tapered to a very fine point. This allows the user to work round the bones in joints of beef, lamp or pork and cut out a sizable piece of meat.
The blade is also flexible, which is great for getting under the skin and filleting fish. There are quite a few boning and filleting knives in the Global range, but the G-21 has a bolster, this is useful where working with raw meat or fish can make the knife slippy, it helps to prevent any unfortunate accidents. There is also a fully forged version of the knife, the GF-31.
The G-22 and G-23 are rather large bread knives with a 20cm and 24cm blade respectively. These knives are alternatives to the classically shaped bread knife the G-9. These blades are much deeper than the G-9 and are basically serrated versions of the G-2 and G-16 cook's knives and so whilst they are labelled as bread knives, they could equally double up as serrated chef's knife. The deeper serrated blade will make it better at cutting through larger than usual loaves of bread such as big sourdoughs or tough bread such as rye or black bread which are typically baked to be quite deep. However due to the size and profile of the knife with its tapered point, it would make a great knife for cutting up any large fruits or vegetables with tough husks, such as pumpkin, coconut and pineapple. A good knife to have for tougher jobs in the kitchen.

This is a specialist knife blade for butchering raw meat. The curved thin blade is designed to slice through joints in raw carcasses. The shape of the knife with its right angle curve in the blade is made to slash across flesh and so separate the meat from bones, ligaments and other parts that are not wanted. It is a specialist knife and does not work well for cutting or chopping vegetables and other regular kitchen work.

This chef's knife can be used for any purpose. It is a really good tough medium sized chef knife capable of performing a variety of kitchen tasks. It is built in the shape of Gyuto, a Japanese style knife, these knives generally have a flat part of the blade towards the heel for chopping, whilst the front half of the blade is curved for slicing and more precision work. The knife has a slightly kicked forward heel to it which provides a semi bolster for a bit of added protection. As a fully forged knife it is stronger than the standard G series of knives and lends itself well for use in professional kitchen settings. A great knife if you are looking for one knife for all tasks. If however you want something a little bigger, consider the GF-33 or GF-34.
As a chef's knife the G-4 is suitable for most kitchen tasks, slicing, dicing and chopping. There is very little difference in performance between the G-4 and the classic chef knife, the G-2. The difference is cosmetic, i.e. the kink in the blade. This gives the knife an 'oriental' styling, but it bears no meaning to the function of the knife. It is not designed specifically for oriental food, or oriental ways of using a knife, it is just a different shape of cook's knife. It does have a nice upward curve to the blade, which when cutting with the knife allows it to rock up and down on the chopping board, a bit like a mezzaluna.
The shape has been so popular that the second new series of Global knives, the Global NI series, has been based on this knife design. The G-4 also comes in a fluted version as the G-66 and in a smaller size as the GS-58.
The G-46 Santoku Knife 18cm is Global's full sized Santoku knife. Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it brilliant for Western style cooking as the blade is flat, deep and powerful, which makes the knife really good for cutting up lots of heavy root vegetables, such as sweet potato, squashes and celeriac.
Global knives produces several variations of the Santoku knife; there are smaller versions of the Santoku, the GS-35 and the GS-37. Santoku knives are also well combined with fluting which helps prevent these vegetables sticking to the knife blades. The fluted version of the G-46 is the G-48.
The G-47 is essentially a Western style version of the Yanagi Sashimi Slicer and works the same way. The G-47 knife has the typical 15 degree bevel on each side of the blade as per the standard G series. It can be used for a number of kitchen tasks. It makes a great carving knife and is perfect for slicing big pieces of your favorite cut of meat. It also makes a good fish filleting knife or for use making sashimi.
The G-49 17.5cm and the G-50 20cm are both Chinese chef's knives, whilst they look like cleavers, they are not suitable for this task. These rectangular knives, referred to in Chinese as Caidao are multipurpose knives. Chinese people and chef's will use these knives in the same way that Western chef's will use Western style chef's knives, such as the G-2. These knives will be typically used to prepare all kinds of meat and fish. In fact it is typically the ONLY knife that a Chinese chef will use. Whilst the Chinese chef's knife resembles a cleaver, it does in fact have a sharp thin blade like a standard G series knife. The G-49 is a typical Chinese Caidao with a 2.2mm thick blade and if used as a cleaver, the blade will usually get damaged. Different parts of the blade are used for different tasks with the front of the blade used for a tapping cutting stroke, the middle and back of the knife for heavier chopping work. Whilst it may seem awkward those skilled with a Chinese blade can use them for any kitchen task.
The G-50 whilst also a Chinese chef's knife has a much thicker 4.0mm blade and is known as a Gudao in Chinese, or Chinese chopper. These choppers are more likely to be used for chopping vegetables, maybe cutting through some softer bones and mincing meat.
In China these knives are literally used for everything and if you are lucky enough to go to a Peking Duck restaurant you will even see the waiter's carving duck meat with these knives.
The G-5 has been a long time favourite of our customers and one of the best selling blades in the original Global series. When Global knives first came to the UK, the shape of the blade was quite strange. A long rectangular shaped, flat blade with only a slight knife point. The G-5 Vegetable Chopper 18cm Blade is inspired by traditional Japanese Usaba knives, popular amongst professional chefs in the Tokyo area and a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable. Global's large handle slicer knives come in two sizes, the G-1 at 21cm and this model the G-6 at 18cm, there is also a small handle equivalent, the GS-2. It is listed as a slicing knife, or slicer knife because of its rounded blunt end. It is very similar to the G-2 in that sense but is designed for cutting meat into pieces, the idea behind the blunt end is that the tip does not nick or catch as you are slicing through meat and you can smoothly roll it into the cut. These slicing blades work particularly well on meat that is close to the bone, such as chicken or duck. Nevertheless, the size and shape of the knife lend it to being another all-rounder and this Global knife can be used as a multipurpose knife for cutting up vegetables.
The G Series of Global knives is a classic collection of large longer bladed knives with weighted hollow handles, used for general food preparation. All knives are made in two parts with the blade and the handle being welded together. The blade itself is made of Cromova18, Global ’s special blend of Molybdenum Vanadium steel, which makes the knife hard compared to European blades and able to retain a decent edge for a long time. The Global G-7 Oriental Deba is a traditional Japanese knife with a one sided grind and it is essentially the G-4 with a single bevel. It is a short but heavy knife, made to cut up whole fish. The blade is squat and has some weight to it, signifying its strength in chopping.
The weight of the deba knife allows it to cut through fish bones to sever the head and tail from the fish and this is what it is designed to do. Using the tip of the blade you can also fillet fish, Japanese style. As a traditional Japanese knife we do not recommend purchasing this knife, if you are looking for a general purpose cook's knife. If you like the shape of the knife but wish to use the blade for more European style cooking, we recommend the G-4.
The oriental Deba also comes in a smaller size as the GS-4.

The main advantage to owning the fluted knife over the standard knives is the non stick properties of these blades. If you cut a lot of starchy vegetables, these knives are quite good as the veg is less likely to stick like glue onto the knives and get in the way of cutting things up.

It is a worthy alternative to the G-3, although we would suggest if you are looking for the standard carving knife to go for the G-3.

The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender. We recommend pairing the G-82 with one of Global carving forks, either the G-13 or the GF-24 to make a matching set. Fluted to prevent food from sticking to the blade.
The G-83 is labelled as a fluted Santoku knife, but it is the fluted version of the G-4 cook's knife and suitable for a variety of tasks. The knife was a launched as a special 'Oriental Style' pack along with the GS-55 and GS-58 and is now available loose. It can be used for a variety of kitchen tasks and is a multipurpose knife.
The G-84 is the fluted version of the G-57 chef's knife and like the standard Global chef's knives can perform most roles in kitchen.
Like it's brother it is set apart from the standard chef's knives by its shorted fatter blade. So the knife is more predisposed towards chopping vegetables. The profile of the knife is similar to a Santoku knife and the knife could be described as a 16cm fluted Santoku Knife.

The G-9 Bread Knife is Global's classically shaped bread knife. It is a specialist knife, really for use with bread or similar food items only. The teeth are made to saw through the crust of bread but could also be used for some tough meats, for example crackling. The funny thing is, the Japanese do not really eat bread and so it is one of those products that they never really understood!
If you look closely at the knife blade you will see that on the face of the knife, the teeth have a chamber whilst on the back of the knife, the face is flat. When you cut into bread, you will automatically cut inwards in a curve rather than straight down and the chamber is there to help correct this so that your slicers will be more of a similar thickness all the way through. Whilst the G-9 can be used by left handers, the set up is right handed. Global can provide left handed bread knives on request. There is also a fluted version, the G-68.
We sometimes get asked from time to time, whether you can sharpen a bread knife. In our opinion you cannot and manufacturers that say their sharpeners can sharpen a bread knife are probably not correct. So please do not try and sharpen your Global G-9 Bread Knife!

The GF-100 has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. With a fully forged blade, the GF-100 is more suited to the professional kitchen and chefs more accommodated to the weight and feel of a German knife.
We recommend the GF-100 for professional chefs who do a lot of chopping in the kitchen.
As a fully forged knife, the GF-100 is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence than that of other knives, which is great if you think Global knives are a bit too light.
The GF-24 will hold your joints of meat securely in place while you carve your pieces of meat. The two tines on the end can be inserted into the meat to check that the meat is cooked as the juices run clear.
Global provide two carving forks in their range, the GF-24 and the G-13. Aesthetically the GF-24 is quite pleasing to look at. Smooth rounded lines finishing in two sharp points. The GF-24 is often preferred to the standard G-13 carving fork. The main advantage of the GF-24 is that it fits in a drawer more easily as it lies flat! The G-13 prongs stick up meaning it often catches the roof of the drawer.
Consider paring with a G-3 carving knife for those perfect Sunday roasts.
The GF-27 is a specialist knife blade for butchering raw meat. The curved thin blade is designed to slice through joints in raw carcasses. The shape of the knife with its right angle curve in the blade is made to slash across flesh and so separate the meat from bones, ligaments and other parts that are not wanted. It is a specialist knife and does not work well for cutting or chopping vegetables and other regular kitchen work. The GF-27 has a bolster, which gives it an edge over the bolster-less G-28. This is particularly useful when the slime from raw meat can make the knife handle slipped, just having the bolster there gives you a little more drip, control and confidence when using the knife.
The butcher knife shape comes from a very old design. In the wild these knives were used for a huge variety of tasks, for cutting up food, skinning animals and self defense.
The GF-31 is essentially the fully forged version of the more popular G-21 Boning knife. Both knives have long thin blades which make the knife good for getting between the skin and the meat of the fish. The main difference between the two knives is the addition of a bolster. The bolster gives a lot of extra protection by preventing hands from slipping forward onto the blade. The main drawback is the fact that this blade is not as flexible. There is a trade off between the strength of the fully forged blade and have a flexible knife. This makes the knife better for more regular use, in professional kitchen settings, where repeated use of the boning knife is needed.

They can slice dice and chop and are generally all round multi-purpose knives. Both series of knives have the same blade, the same blade thickness and ultimately the same edge. The forged series however is likely to be a better option if the knife is being used every day is a commercial kitchen. It is a lot stronger than the G-2, but also consider the weight of the knife, as some chefs prefer to have a heavier blade in the hand.

With a long narrow blade the knife can also be used for filleting fish, slicing fish or preparing sashimi. It makes a poor chopping knife, because the blade is in line with the bottom of the bolster, meaning the knife can only really be used for slicing by drawing the knife backwards.
As a fully forged knife, it has a lot more strength than the standard Global carving knife and the GF-37 is fantastic for professional settings where a carving knife is needed in constant use. These make brilliant knives to use where food is brought to the table and carved in front of people, repeatedly.
It provides an alternative to the G-3, if you prefer a bolster on the knife.
The GF-40 is listed as a boning knife, but the profile of the blade makes it suitable for a variety of kitchen tasks because of the small hilt and elongated upturn in the blade. Being fully forged it is strong enough for most kitchen tasks and can be equally used as a universal knife. This knife can be used as a small slicer, a boning knife or for cutting up small bits of meat, fruit or vegetables. It has a nice big comfortable handle with a bolster for extra protection. The protection of the bolster makes the knife suitable for cutting raw meat as it gives you a bit more grip on the handle.

The G-4 chef's knife is well-suited for a variety of kitchen tasks, including slicing, dicing, and chopping. The G-4 features a kink in the blade, giving it an 'oriental' style, but this design does not affect its functionality or make it specifically for oriental cuisine. The upward curve of the blade allows for a rocking motion on the chopping board, similar to a mezzaluna, making it efficient for various cutting techniques. The design has gained such popularity that it inspired the creation of the Global NI series, the second new series of Global knives. Additionally, the G-4 model is available in a fluted variant, known as the G-66, and in a smaller size as the GS-58.

The GS-110AN is a beautiful 'Kiritsuke' shaped knife, useful for many tasks in the kitchen. Our small Kiritsuke features a slight curve for easier cutting, making it a versatile tool for chefs.
The newest addition to the Global family is the GS-110, a small 15cm Kiritsuke Knife. Traditionally, Kiritsuke knives are much larger, often over 24cm in length, and are used by Japanese head chefs as multipurpose slicing knives. They typically feature very straight blades similar to Japanese Usuba vegetable knives, combined with the length of a Yanagiba knife. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a symbol of status.
Our smaller Kiritsuke, the GS-110, pays homage to this traditional knife with a slightly curved blade that aids in general cutting tasks, functioning effectively as a small chef's or cook's knife. The GS-110AN model is featured in all special edition 40th anniversary sets.
Traditionally, many Japanese knife manufacturers produced specialist knives with single-side grinding known as “Kiritsuke”. These knives required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to wield one. The Kiritsuke Knife thus became a symbol of expertise, status, and seniority.
Drawing from this tradition, Global ® Knives engineered a Double-Edged version of the Kiritsuke in their Classic series, creating a highly versatile knife capable of performing tasks typically handled by a Gyuto or Chef’s Knife, as well as those of a Nakiri and Sujihiki. It features less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting motion. The blade's tip is particularly adept for fine dicing and chopping.

The G-46 Santoku Knife 18cm is Global's full sized Santoku knife. Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it brilliant for Western style cooking as the blade is flat, deep and powerful, which makes the knife really good for cutting up lots of heavy root vegetables, such as sweet potato, squashes and celeriac.
Global knives produces several variations of the Santoku knife; there are smaller versions of the Santoku, the GS-35 and the GS-37. Santoku knives are also well combined with fluting which helps prevent these vegetables sticking to the knife blades. The fluted version of the G-46 is the G-48.

SAI Cylinder Engine Block
The ‘Team SAI’ knife block features 5 stainless steel cylinders made from the finest 18/10 material. This premium set includes an SAI-01 Chef’s knife, SAI-05 Bread knife, SAI-M06 Vegetable knife, SAI-S02 Utility knife and SAI-S01 Paring knife.
The SAI-01 is the leading knife in the Global SAI range. As the 19cm Chef's knife it can perform any kitchen task and is the perfect all-round knife for mincing, dicing, chopping and slicing. The handle design incorporates an ergonomic thumb rest which helps set the right grip for the best cutting technique. The second piece in the set is the Global SAI-05 23cm Bread knife which is designed to cut through the crustiest loaves of bread, it has a serrated edge that can also be used to slice through fruit and soft vegetables. Next is the Global SAI-M06 15cm which is a specialist Vegetable chopping knife. It has a long flat blade designed to get a clean cut when the knife cuts down onto the board. It is quite a heavy knife and suitable for long hours in the kitchen. The next piece in the set is the Global SAI-S02, which is a good all-around knife and has a good mid-sized blade length at 10cm which is suitable for a range of tasks. The shape of the blade suggests that knife can be used for slicing and so would make a good small carving knife especially if you like eating chicken or duck. It is also the knife closest to being a filleting knife in the range. The Global SAI-S01 9cm paring knife is the final piece of the set. The GN-004 is Global Ni's large size bread knife and has a saw like blade for sawing through the crustiest loaves of bread. If you have bought a Global Ni series we do advise caution though as this blade does not fit in some of the smaller knife holders. For those looking to complete their collections we also suggest the GNM-09 bread knife which has a slightly smaller 21cm blade.
One of the problems of the Global Ni series is that the cook's knife is sort of a hybrid between a classically shaped cook's, santoku and vegetable knife, so when we say this knife is the Global Ni santoku knife it looks very similar to the cook's knives. The only slight difference is that this knife has a deeper blade and it is slightly flatter making it better at chopping rather than slicing. The Global Ni Santokus come in 3 different sizes, a middle size, the GNM-05 and a mini 11cm the GNS-03.

The GNFS range, standing for Global Ni Forged Small, this paring knife is the smallest knife in the Global Ni range with a small 9cm blade. The GNFS-01 has a fully forged blade with a flat handle similar to the GSF-15 in the classic Global series. The knife is small but strong to be used for all those little kitchen tasks, including cutting small fruits and peeling vegetables.
The GNFS-02 is the larger knife in Gobal Ni's small fully forged series. It features a small sized 11cm blade and a flat handle. The knife is made to be small but strong and is suitable for a varierty of tasks such as cutting and slicing. As the title says this utility knife can really be used for anything.

The GNM-09 is a specialist bread knife and really can only be used for this purpose. The GNM-09 was created as the original bread knife the GN-004 did not fit so well into some of the smaller blocks. The GNM-09 is comparable to the popular G-9 knife in the Global classic range and makes a fine addition to any set.
The GNM-10 is the smaller version of the GN-005, created to fit better in the Global Ni blocks. It has a long thing blade just for cutting those perfect cuts of meat. This knife works really well with boneless joints of ham or even salmon.
The GNM-11 is the fluted version of the GNM-10 carving knife. The knife is perfect for carving large joints of boneless meat. These knives also have long blades suitable for filleting large fish such as salmon and trout.
The GNM-12 is Global Ni's flexible boning knife and is great for filleting fish with its long thin blade. Great for use with seabass, trout or even larger fish like salmon. The shape of the knife also lends itself to working well as a carving knife. If the GNM-12 is a bit big for you, consider the 12cm version the GNS-06.
The GNS-02 has a really flat blade making this utility knife particularly good for slicing. The blade itself is not so deep so if you are looking for a utility knife for cut and chopping try the GNS-03.
The smallest of the Global Ni santoku knives, the GNS-03 should be seen more of as a petty knife suitable for little kitchen task as a utility knife. A really nice all round knife to complete sets.
The GNS-06 is a small flexible utility knife made for the Global Ni range and is a good useful alrounder in any collection. The knife performs much in the same way as the GS-11 Global classic utility knife. Good for filleting small fish such as seabass and seabream or as a small carving knife for chicken and duck. The knife is available in a larger version as the GNM-12.
The GNS-08 is a scalloped or serrated version of the GNS-06. The teeth make it really good for cutting through vegetables with touch skins and soft interiors such as tomatos, plums and kiwis. This knfie can also be used as a small bread knife.
The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade and like all cook's knives is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
